Bell’Aja Bolgheri Bianco D.O.C. 2023 from San Felice is a sensational, dry white wine made from Vermentino grapes in the Tuscany region. It is a stunning example of the multi-sensory San Felice approach to wine with its heady, aromatic notes of jasmine flowers, fresh thyme, and white fruit on the nose, that elegantly come through on the palate with its freshness and memorable dry finish. We paired the wine with our recipe for Luxury Experience – Spinach and Swiss Cheese Quiche accompanied by a mixed green salad and chopped Granny Smith green apples in a vinaigrette made with extra virgin olive oil, tarragon vinegar, a squeeze of lemon, freshly ground black pepper, and a little honey to emulsify the dressing. Bottle Notes: “The distinguishing features of this wine are reminiscent of white fruit, jasmine flowers, and thyme. Fresh and harmonious on the palate, it expresses an immediately pleasant flavour, characteristic of this area.” 

Tasting Notes: The color is stunning, rich pale gold. Aromatic floral notes of jasmine and herbal notes of fresh thyme arouse and engage the senses, first on the nose, then delightfully follow through on the palate where mineral notes, jasmine, white fruit, and fresh thyme prevail for a gorgeously dry finish.

Luxury Experience – Spinach and Swiss Cheese Quiche

Preheat oven to 350 degrees Fahrenheit/177 degrees Celsius.

Crust Ingredients:

Crisco (Vegetable Shortening)

Vodka

Method for the Crust: Add flour, Crisco, and salt to a food processor and process until crumbly. Add 5 tablespoons of vodka and process until the dough comes together in a ball. Do not overwork dough or the crust will be tough.

Note: Depending on the humidity level, if the dough is too dry, you may need to add a bit more of vodka.

Pro-Tip: Lightly spray the pie plate with vegetable spray to ensure easier removal of sliced quiche.

Roll out dough between parchment sheets lightly dusted with flour. Slide the dough into the prepared pie plate. Trim excess, and pinch edges of dough with thumb and index finger to create a pretty fluted rim. Set aside while you make the filling.

Method: Mix all ingredients (except garnishes) together in a bowl. Pour into unbaked pie crust. Bake in a 350-degree Fahrenheit/177-degree Celsius oven for approximately 45 minutes or until knife inserted in center comes out clean.

Presentation: Place a slice of the quiche on a plate, add the mixed green salad, and chopped Granny Smith apples tossed with the vinaigrette, and scatter fresh thyme leaves and edible flowers on the quiche and around the plate for a pretty presentation.
