Bottle Information: Tumblin’ Dice Straight Rye Whiskey 13-Year-Old, Barrel Proof is made with a mashbill of 95% Rye and 5% Barley, sourced and made in small batches. Aged a minimum of 13 years in new charred barrels. Proudly made in the USA – distilled in Indiana and botted by Proof and Wood Ventures, Lancaster, Kentucky. 101.62 Proof, 50.81% Alcohol By Volume, 700 ml. $110/bottle.

Method for the Cocktail: Add ingredients to a mixing glass, stir to combine, pour over a round ice ball wrapped with a long lemon peel.

Homemade Cardamom Syrup Ingredients:

Method for the Cardamon Syrup: Add all ingredients to a saucepan and boil until sugar is dissolved and liquid is clear. Remove from heat and let cool. Strain syrup into a glass jar and refrigerate until ready to use. Will keep for several weeks in the refrigerator. In addition to using for cocktails, it is also nice to add to hot or iced tea, lemonade, use in homemade barbecue sauces, and also brushed over cake to keep it moist.

Dragon Fruit “Dice” and Amarena Cherries, garnish

Method for the Cocktail: Add ingredients to a mixing glass, stir to combine, pour over square ice cubes in a rock glass. Skewer dragon fruit “dice” and Amarena cherries to garnish the cocktail.

Pro-Tip: Dragon fruit (also called pitahaya or pitaya) has a magenta exterior, which when removed has a white interior with black seeds. When cut in cubes, it resembles dice.

Equipment: 2.5-inch/6.35 cm removeable bottom metal tart pans or (1) 10-inch/25.4 cm removeable bottom metal tart pan

Tart Shell Ingredients:

Walnuts, chopped

Method: Add all ingredients to a food processor and process to form a smooth dough. As this is a butter crust (pâte sucrée) you need to chill the dough until firm before rolling dough between two pieces of parchment paper lightly sprinkled with flour. Roll out dough. Use a round biscuit or cookie cutter one-half larger than the size of the tart pan to cut dough circles.

Note: The baked tart shells will have a cookie-like texture.

Pro-Tip: Lightly spray metal tart pans with vegetable oil for easy removal of the baked tarts.

Lightly press the cut dough circles into individual tart pans (or one large tart pan) Prick the bottom and sides of the tart dough so that the dough will not “bubble” during baking.

Bake for 10-12 minutes or until crusts are firm and dry looking. Let cool on rack, then remove tarts from the pans.

1 Ounce Tumblin’ Dice Straight Rye Whiskey 13-Year-Old

Method: Melt butter in a medium saucepan, add the brown sugar, and salt. When the brown sugar has dissolved, add scalded milk and stir to combine stirring continuously. Then add butterscotch chips. Let melt.

Beat yolk with 4 ounces cold milk, then add cornstarch and stir to combine. Slowly add the cold milk egg mixture to the hot mixture and cook is thick, smooth, and is bubbling, about 8 minutes. Add the Tumblin’ Dice Straight Rye Whiskey 13-Year-Old, Barrel Proof to flavor the pudding, and stir to combine.

Remove the saucepan from the heat and spoon or pipe the puddling into baked tart shells. Let cool on rack then refrigerate for at least 1-hour before serving. Garnish with fresh mint leaves and caramelized walnuts (optional). Serve with a small glass of Tumblin’ Dice Straight Rye Whiskey 13-Year-Old, Barrel Proof to pair with the dessert.

Tarts will keep in the refrigerator for several hours and even overnight making them perfect to serve for parties.

Method for Caramelized Walnuts: Melt 2 tablespoons sugar in a sauté pan over medium heat. When sugar is almost completely melted, add a quarter cup of chopped walnuts, and stir to coat. When walnuts are caramelized (coated), turn out onto parchment paper and let cool.
