Servings: 12 Stuffed Clams

Special Equipment: Medium Clam Shells (purchased or repurposed), or metal shells

Preheat oven to 400 degrees Fahrenheit/204 degrees Celsius.

Ingredients:

Chopped Clams

Mushrooms, minced

Fresh Flat Leaf Parsley, chopped

Seasoned Italian Breadcrumbs

Shredded Swiss Cheese
Salt and Pepper, to taste
Lemon Half, garnish
Fresh Parsley, garnish

Pro-Tips: We like to use mushrooms added to the clams, as they act like little sponges and absorb the flavors of garlic and clam juice. Spray the inside of the clam shells before filling, so that the filling will lift out easily once baked.

Method: Heat a saucepan over medium heat. Add the EVOO, then add mushrooms, garlic, and salt and pepper. Sauté until the mushrooms are tender. Add the clams and wine and simmer for 10 minutes to let the mushrooms absorb the rich flavors. Add the breadcrumbs and cheese and stir to thoroughly combine. Add 1 heaping tablespoon of filling to each clam shell and place on a baking sheet. Once all shells are filled, lightly spray the filling with EVOO. Bake for about 15 minutes until the mixture is heated through and starts to bubble.

Presentation: Present the stuffed clams on a plate with half lemon and garnish with fresh parsley.
