Bottle and Technical Notes: "Origin: South of the Asti Hills in Piedmont, Italy. The Wine: Elegant, red fruit, vibrant body with roundness and a beautiful savory finish. The 2020 winter season began with mild temperatures and little rainfall. The first part of spring was relatively dry and sunny, and March and April enjoyed good weather and mild temperatures. In May, an unstable climate recorded a considerable number of rainy days, lasting until late June. This slowed down vegetative development but allowed for an accumulation of water in the ground. It was a generally abundant vintage, although thinning brought quantities back to normal. Overall, the climate was ideal, with a final sprint of bright days and excellent temperature range between day and night from mid-August to late September, conditions that characterize great vintages."
Tasting Notes: The color is a deep, rich, ruby red that is almost purple. The nose is headily aromatic with red mature fruit, cherries, red raspberries, on the nose, which follows through on the palate. The finish is lush and lingering, with good structure and balance.
Suggested Pairing Notes: Pasta with tomato, pizza, Livorno-style fish, and white meat.

Method: Preheat oven to 400 degrees Fahrenheit (204 degrees Celsius).
Heat medium saucepan, add EVOO, then add cod to gently "poach" it. Carefully place the cod in a covered casserole and set aside.
Add carrots, celery, and garlic to the saucepan, cover and cook until vegetables are tender. Add mushrooms and cook until tender. Add scallops and shrimp and cook through. Using a slotted spoon, add the vegetables and the seafood to the casserole with the cod.
Add the chopped fresh tomatoes, canned crushed tomatoes, fresh parsley, fresh oregano, black pepper, and black olives to the saucepan, cover, and cook 10 minutes. Add the wine and pour the sauce over the seafood and vegetables in the covered casserole. Bake for 30 minutes.
Ten minutes before stew is done, remove the cover of casserole, and boil the water for the polenta.

Method: Bring water to a boil in a medium saucepan, add sea salt, and EVOO. Add polenta while stirring to ensure a creamy consistency. Cover, and lower heat, and cook until polenta is thickened but still soft and creamy.
Presentation: Spoon polenta into a deep serving bowl or individual deep bowls, then top with the seafood stew. Garnish with fresh herbs and accompany with glasses of Michele Chiarlo Le Orme Barbera d’Asti DOCG 2020.
