Product Information: To fully appreciate Rhum Barbancourt White Rhum, it is important to understand that it is a rhum agricole, meaning that it is produced from crushed fresh sugar cane juice, rather than from molasses, which is how rums are made. The aromas of rhum agricole are much different than the aromas of rums. On the palate, the taste is also different. Rhum agricoles have a clear freshness, with sweet, herbal, and grassy notes.
Rhum Barbancourt makes their Rhum Barbancourt White in the traditional method using 100% sugar cane harvested from its 600-hectacre plantation, then crushes the cane immediately to ensure the freshest of juices (vesou), which is then double distilled and fermented with their exclusive Barbancourt yeast. They finish their Rhum Barbancourt White Rhum by letting it rest in a stainless-steel tank for less than one year. Made in Port-au-Prince, Haiti, Rhum Barbancourt is imported by Crillon Importers.

Interview with Delphine Gardère
Delphine Gardère, thank you for taking time to speak with Luxury Experience. Congratulations on being the 5th generation of your family to head Rhum Barbancourt. In a predominantly male industry, it is wonderful to have a woman at the helm of such a prestigious company founded in 1862.
Delphine, how did you learn the process of making rhum agricole?
"The business has been handed down from generation to generation. My father taught me most of what I know. I also attended some training sessions with WIRSPA, and also did a few internships in other spirits institutions. He was always conscious of training younger and newer generations to insure the perennity of Barbancourt. This year the company turned 158 years old. After my father’s death, I spent a lot of time learning from the team in place, and ultimately, we are carrying together the tradition forward."
There are only a few countries that make rhum agricole. What would you like people to know about Rhum Barbancourt’s Rhum Agricole and what makes it different?
"Being the first black independent nation in the world, with influences from the French and Spanish, we speak creole – our main language – a melting pot of different influences. Our culture is renowned for its complexity bringing African, Indigenous, and European influences. As a Haitian Rhum Brand, we do not abide by the AOC guidelines. However, we do produce our rhum from fresh sugar cane juice and age it in French oak."
What are some of the challenges competing the Rhum/Rum industry?
"I would say challenges also bring opportunities. Today there are many rum brands, and the industry is booming. Rum inspires escapism so consumers are curious to "try out" different rums from different countries; Hispanic rums have a style, French rums have a style, and Haitian rhum has a particular style, I would say."
Are there any new product lines on the plans at Barbancourt?
"We are looking at different things in the pipeline such as using a pot still, overproof rum, cask finishes and more, so watch our website…its essential for us that any development fits in with the DNA of Barbancourt: Authenticity, Craftsmanship, and Haiti."
When not working in the distillery, how do you like to spend your free time?
"I am a mother of two daughters, and this takes up a lot of space in my life. It’s important for me to be a role model and help empower other Haitian women to break the glass ceiling. I am also an avid collector of art and love spending time in art galleries and going to art shows. Our foundation takes spends time on Female Empowerment and advertising Haitian culture.
I love traveling the Americas, Europe, Middle East, Africa, and also Asia. I am looking forward to non-Covid times as my girlfriends and I are planning a backpacking trip to Machu Pichu."

Method for the Homemade Rose Syrup: MUST Use organic rose petals only.
In a saucepan, add the sugar and water, bring to a boil, add the organic red rose petals, and boil until liquid is clear. Let cool. Strain syrup into a glass jar, discard rose petals. Syrup can also be used over ice cream, as a marinade, brushed on cake layers, and used to sweeten cocktails or other beverages.
Method for the Cocktail: Chill a Martini Glass. Add all cocktail ingredients to a shaker with 4 ice cubes, shake hard to dissolve ice. Strain cocktail into the Martini Glass. Garnish with an organic edible flower.

We love to use flavored ice in cocktails, which provides layers of flavors as it melts.

Method for the Cashew Juice: Mix 2 ounces of the Dafruta Cashew Juice Concentrate with 4 ounces of water to create the juice.
Method for the Cocktail: Mix all ingredients in a mixing glass. In a rocks glass, place a cashew juice ice ball, then pour the cocktail over the ice ball.

Luxury Experience – Cauliflower Gorgonzola Soup with Gorgonzola Almond Crisps works well served hot for colder months or chilled for warmer months. The soup is made with onions and cauliflower florets, Great Northern Beans to add protein and body, gorgonzola for flavor and creaminess, and is enhanced with Rhum Barbancourt White Rhum. Served with Gorgonzola Almond Crisps, it makes a lovely starter or main course. The crisps are also fabulous to serve with cocktails.

Method for the Soup: Melt the butter in a large saucepan, add the onion, cover, and sweat the onions until they are translucent. Add the cauliflower florets, beans, salt and pepper, and chicken bouillon, and cook until cauliflower is tender. Use a blender and puree in small batches. Finish the last puree by adding the gorgonzola. Add the Rhum Barbancourt White Rhum just before serving.
Presentation: Serve the soup with the Gorgonzola Almond Crisps.

Method for the Crackers: Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius).
In a food processor or standing mixer, beat the butter until creamy. Add the flour, baking powder, salt, and gorgonzola. Process until crumbly. Add 1-cup toasted sliced almonds and process until the dough forms a smooth ball.
Roll the dough between parchment sheets lightly dusted with flour into a rectangle. The dough should be thin enough to crisp yet thick enough to hold together when picked up.
Slice the dough into long strips. Make an egg wash with the egg white and the water. Brush the strips with egg wash and then cover the strips with almonds, and finish by brushing the almonds with a little of the egg wash.
Bake on a parchment lined baking sheet for 15 minutes or until strips are golden. Let cool on a baking rack. Store in an airtight container until ready to serve.
