The first time we tasted Vin Santo was in Tuscany at a friend’s castle. The rich, exquisite taste, as well as the majestic ambience, made Vin Santo forever memorable. We reacquainted ourselves with Vin Santo at the end of a lovely wine pairing lunch which included San Felice Belcaro Vin Santo Chianti Classico DOC 2015 at Peasant Restaurant in New York. For those that have never tasted Vin Santo, it is a traditional Italian sweet wine that is served at the end of a meal and enjoyed with espresso and Cantucci biscuits, desserts, or with a cheese course of aged Gorgonzola. We paired San Felice Belcaro Vin Santo Del Chianti Classico, DIOC, 2015, Italy with our recipe for Luxury Experience – Vin Santo, Gorgonzola, and Almond Cantucci Biscuits, which celebrates the richness of the Tuscan region and its delectable wines.

Bottle Notes: “Vin Santo Belcaro is a journey through tradition, from the vine to the bottle, through its amber color and fragrant aroma characterised by scents of almonds, apricot, and honey. Serve with Cantucci biscuits to delight your guests time and time again.”
Technical Notes: “The grapes, harvested at the beginning of October, are put onto cane mats to dry until December; they are then softly pressed, and the must ferments slowly and refines for 5 years in small oak barrels (caratelli).”
Tasting Notes: The color is a rich amber that delights the senses with its rich, sweet aromatics with honey, apricot, and almond notes. On the palate, apricot, raisin, almond, and honey notes prevail, with a delectable, caressing, and lingering finish.
Pairing Suggestions: Desserts and almond based pastries, sheep’s milk cheeses, and aged Gorgonzola.

As San Felice Belcaro Vin Santo Del Chianti Classico, DOC, 2015 pairs well with almond based desserts as well as aged sharp cheeses like Gorgonzola, we created our recipe for Luxury Experience – Vin Santo, Gorgonzola, and Almond Cantucci Biscuits to bring out the essence of the vin santo and also presented it with gorgonzola on the platter.

Yield: 5 Dozen miniature Cantucci biscuits
Preheat oven to 350 degrees Fahrenheit/177 degrees Celsius.

Method: Mix all ingredients together in a food processor or mixer, until the dough comes together as a smooth ball. If the dough is too sticky (humidity will effect dough), add another one-quarter to a half cup of flour. Divide dough into 4 equal parts. Roll and flatten dough into four rectangles 2-inches wide on a baking sheet covered with parchment paper.
Pro-Tip: Using dental floss, partially cut the logs into slices. Once baked, this will allow you to cut cleaner slices.
Baking: Cantucci Biscuits are first baked for 25 minutes, then cooled on a baking rack for 15 minutes. They are then sliced (which is why pre-cutting them helps). The slices are placed cut side down and baked for 7.5 minutes, then turned over and baked for an additional 7.5 minutes. Once baked, remove from the oven and cool on a baking rack. Store in an airtight container until ready to enjoy.
Presentation: Present a glass of San Felice Belcaro Vin Santo Del Chianti Classico, DOC, 2015 with a cup of espresso, Luxury Experience – Vin Santo, Gorgonzola, and Almond Cantucci Biscuits, along with aged gorgonzola and a small pitcher of honey. The Cantucci biscuits are especially delicious dipped in the vin santo! Delicious!
