Method for
the Soup: In a large saucepan, melt the butter
over medium heat, then add the Vidalia onion and celery. Cover and sweat until
translucent. Add the English cucumber and the corn, stir to combine, cover, and
let cook for 5-6 minutes. Add the green chiles, unsweetened coconut milk, and
chicken bouillon (or chicken stock). Cook until vegetables are tender.
Pour the
ingredients from the saucepan into a blender in small batches, and process
until very smooth. Strain mixture in a mesh strainer stirring with a spoon to
elicit the most liquid from the soup. Discard ant solids remaining in the
strainer. Add lime juice and Wild Moon Cucumber Liqueur to the strained soup. Add
salt and pepper, to taste, if desired. Chill for several hours in the
refrigerator, or over an ice bath if in a rush.
Method to
create Scallion "Brushes": Cut scallions 2-inches in length from the
white bulb. Using a sharp knife carefully make multiple slices through the
green layers stopping just short of the bulb end. Place the brushes into an ice
water bath to open them up. May be made ahead and kept in the refrigerate.
Presentation: Pour soup into bowls, (or Martini glasses), scatter thinly cut green
scallions and dried coconut over the top, and finish with scallion brushes.
Until next
time, cheers, its cocktail time!
About Wild
Moon Liqueurs
Creatrix
and Infusionary Lelaneia Dubay is the
creative force behind the woman-owned distillery, Hartford Flavor Company,
which launched in March 2015. A master Landscape Designer, artist, herbalist,
home cook, and cocktailian, Lelaneia brings all her passions to her creations
for Hartford Flavor Company and Wild Moon Liqueurs.
Inspired at
the age of 13 to always make and eat good food, she learned how to cook, and
now eats only organic food. She and her husband Tom started making Cranberry
Liqueur at home which they gave as gifts for family and friends who loved it.
Since their Cranberry Liqueur was so well loved, she branched out into making
Lavender, Rose, Chai Spice, and Birch Liqueurs, which like the original
cranberry, were big hits, and after hosting a party at their home in 2013, they
thought they were on to something, and it was the inspiration for launching
Hartford Flavor Company and Wild Moon Liqueurs.
Wild Moon
Liqueurs inspired line of liqueurs include Cucumber,
Lime, Cranberry, Lavender, Birch, Chai Spice, Sumac, 7 Lemon, Sage, Roasted
Dandelion Root, and Rose.
Just
imagine the possibilities for creative cocktails and for culinary uses. In
addition to trying the Wild Moon Cucumber Liqueur, we also tried their Wild
Moon Lavender Liqueur, and their Wild Moon Rose Liqueur.
