Continuum Distilling, founded in 2019 and based out of Waterbury, Connecticut, has created a delectable alcohol called Continuum Distilling "Drops" made from local Connecticut Craft Beer IPAs. Continuum Distilling is the brainchild of Head Distiller Brandon Collins, Jim Baranowski, brothers Tom and Jason Sobocinski, and Master Brewer Tyler Jones of Black Hog Brewing, who have partnered to create a unique and very tasty spirit. Distilled from "Grain, Cane, and Hops," Continuum Distilling Drops is a delectable clear spirit with floral, bright, hoppy notes, and 46% alcohol by volume (92 proof). Crafted in small batches, the Batch Number is handwritten on each on bottle.

for the Cocktail: To a mixing glass, add the blueberries, mint leaves, and
sugar. Muddle. Add the Blackberry Bubly Sparkling Water and stir. Pour into a
rocks glass filled with ice. Garnish with generous lemon peel studded with mint
leaves.

Method
for the Cucumber Juice: Cut a Persian cucumber in half lengthwise. Juice
half the cucumber in a blender, strain juice, and reserve.
Method
for the Cocktail: Chill a Martini glass. In a shaker glass, add the
Continuum Distilling Drops, cucumber juice, Extra Dry Vermouth, lemon juice,
and 4 ice cubes. Shake until ice is dissolved. Strain into chilled Martini
glass. Add cucumber and chive garnish.
Method
for the Cucumber Chive Garnish: Use a vegetable peeler to cut the remaining
half of the cucumber into long strips for garnish. If using chives and chive
blossom, roll one cucumber strip, poke a hole through the rolled cucumber with
a skewer and insert the chive stem with chive blossom. Tie end of the chive stem.
If not using chives, secure rolled cucumber with a bamboo skewer.

homemade chive simple syrup, and lime juice, and while it is not a health
drink, it certainly is tasty. The avocado provides body and a rich creaminess,

Method
for the Chive Simple Syrup: Add water and sugar to a saucepan, bring to a
boil. Add chives and continue to boil until liquid is clear and sugar has
dissolved. Remove from heat, let cool, and store in refrigerator in a glass jar
until ready to use. Lasts several weeks and can be used to sweeten cocktails
and other beverages, brush on fruit and grill, or add to your favorite
marinade.
Method
for the Cocktail: Chill a Martini glass. In a shaker glass, add the avocado
and muddle. Add the chive simple syrup, lime juice, and continue to muddle
(mash) the avocado until exceptionally smooth. Add the Continuum Distilling
Drops, and 4 ice cubes. Shake until ice is dissolved. Strain into chilled
Martini glass.

Method
for the Sorbet: To a blender, add the orange zest, fresh mint, and sugar.
Blend until sugar is very powdery, and mint is very fine. Add the orange juice,
water, and salt to the sugar mint mixture, and blend until very smooth.
Add the
mixture to a saucepan and bring to a boil to dissolve sugar and incorporate
flavors. Remove from heat and let cool. Add the Continuum Distilling Drops,
stir, and pour into a plastic container. Freeze mixture overnight. Remove from
freezer, place frozen mixture in a food processor, and process until sorbet is
very smooth. Place back in plastic container and freeze for several hours
before serving.

"Usually
distiller's beer is comprised of only the most basic grains with the purpose of
extracting the most sugar possible to obtain an optimal efficient conversion
into alcohol. We discovered that there
are multiple steps in the brewing process where ingredients, such as sugars,
fermented out beer with yeast in suspension, and flavorful solids can all be
recouped and repurposed for distilling.
It would be extremely expensive to attempt to recreate these flavors as
beers and distill them for a spirit, but when these delicious compounds can be
utilized using disposed waste or "trimmings" from the brew process...that
is when sustainability and innovation marry to make something exceptional! Continuum
