Now that Spring has arrived and Summer will soon be here, our thoughts and palates start thinking about lower alcohol wines to enjoy with friends. We found that Ottella Lugana DOC 2021 from the Lugana Region of Northern Italy to be a very notable choice with only 12.5% alcohol, but with layers of flavors. This is an elegant wine that is perfect to serve as an aperitif or to pair with food. Ottella Lugana DOC 2021 is imported by Vias Imports, Ltd. Salud!

Bottle and Technical Notes: "Harvested from the end of September until late October from San Benedetto di Lugana region located in the southern area of Lake Garda. Harvest and bunch selection done strictly by hand in small 17 kg cases. Crushing, soft crushing of whole bunches for most of the production, while the rest is lightly destemmed by oscillation. They follow strict winemaking processes: racking off the lees by natural settling, slow fermentation at controlled temperature (14 – 18 degrees Celsius/57 – 64 degrees Fahrenheit), followed by aging for 6-8 months on fine lees." This wine received 91 points from WineEnthusiast.

Tasting Notes: The color is a bright straw color with a very aromatic nose. The terroir has a high white clay content which imparts limestone and mineral notes. The wine also has pear and lemony notes on the nose that follow through on the palate. With only 12.5% alcohol, it is light yet luscious, an elegant wine that will be perfect to serve as an aperitif at any time, or to serve all summer long.

Suggested Pairing Notes: Lake and sea fish, soups, pasta and rice dishes, white meat served in a sauce.

For our pairing, we looked to the sea and paired Ottella Lugana DOC 2021 with Luxury Experience – Olive Oil Poached Alaskan Cod with Olive Tapenade on White Bean Puree, which was a lovely mix of sea and land, and the perfect complement to both the wine and the food. The lemon used in the tapenade and as a garnish help to really bring out the flavors in this delicious wine.

Luxury Experience -Olive Oil Poached Alaskan Cod with Olive Tapenade on White Bean Puree

Olive Tapenade Ingredients:

Green Olives with Pimentos

Extra Virgin Olive Oil (EVOO)

Lemon Zest

Fresh Lemon Juice

Flat Leaf Parsley, finely minced

Method for the Olive Tapenade: Add all ingredients (excepting parsley) to a food processor and process until smooth. Stir in minced parsley. Place in a bowl, cover with plastic wrap and refrigerate for several hours to meld flavors. Heat just before plating.

Cod Ingredients:

Extra Virgin Olive Oil, for poaching

Method for the Cod: Heat a saucepan that is large enough to hold the cod. Add a small amount of EVOO to the saucepan, then add the cod, and cover cod with olive oil. Cover and poach until fish is white and cooked through but not golden. Drain on paper towels and keep warm while plating.

Olive Oil from the poached cod
Salt and Black Pepper, to taste

Method for the Cannellini Puree: Drain, rinse, and soak the cannellini beans in cold water for 30 minutes, then drain. Add all ingredients to a food processor and process until smooth. Add a little more wine and olive oil used to poach the cod if needed.

Garnishes: Lemon Strands, capers.

Presentation: Spoon the puree on the plates, place the cod on top of the puree, then add the olive tapenade over the cod. Garnish with lemon strands and scatter capers on the plate.

The 90-hectare estate in Lugana is located "between the municipalities of Peschiera del Garda, Pozzlengo, Lonato, Desenzano and Sirmione in an area with notable white clay and is bordered by the morainic "theatre" and Lake Garda."
