Red wine lovers are in for a treat with the San Felice Chianti Classico DOCG 2021. This traditional, elegant Chianti Classico delivers cherries, raspberries, and hints of violets on the nose and palate and pairs well with a diverse variety of food. We paired it with our recipe for Luxury Experience – Swordfish with Tomatoes, Shitake Mushrooms, and Red Peppers and it was a delicious pairing.

For those unfamiliar with Italian wine designations, DOCG is the highest Italian wine designation and ensures quality. The official terminology is Denominazione di Origine Controllata e Garantitita, which translates into English as Denomination of Controlled Origin and Guaranty. The black rooster and the Chianti Classico icon on the San Felice Chianti Classico DOCG bottle denotes that it belongs to the Chianti Classico Wine Consortium. Another interesting fact about Chianti Classico is that it dates to the early 1700s, so when you are drinking Chianti Classico, in essence you are drinking history, tradition, and quality.

Technical Notes: “The 2021 vintage was characterized by a mild and dry winter, followed by 2 below zero nights in April which reduced production. A rainy Spring helped the grapes survive a long, hot summer. The harvest took place from mid-September until the first week of October. Vinification and Maturation information: 8-10 days fermentation on the skins at 28-30 degrees Celsius, followed by malolactic fermentation in steel. Maturation in large Slavonian oak casts for 10-12 months, followed by 2 months in bottle. Although the production quantity was small, the quality was excellent.”

Tasting Notes: The color is ruby red with notes of cherries, raspberries, and hints of violets on the nose and on the palate, with soft tannins for an elegant and delectable finish. This is a traditional medium-bodied Chianti Classico.

Pairing Suggestions: Pair with antipasti, full-flavored first courses, and most red meats.

Serve over polenta and garnish with fresh rosemary and oregano.

Ingredients for the Swordfish:

Swordfish, trimmed, cut into triangular pieces

Red Peppers, large dice

Garlic, sliced thin

Campari Tomatoes, quartered, then halved

Fresh Herbs, Rosemary, and Oregano
Salt and Pepper, to taste

Method: Preheat oven to 400 degrees Fahrenheit/204 degrees Celsius.

Heat a large oven-proof skillet over medium-high heat. Add salt and pepper to pan, and heat. Add 2 tablespoons of EVOO then add red peppers and sauté for a few minutes, then add sliced garlic, and mushrooms. Add a little more EVOO (if needed) to the center of the pan, add swordfish and sauté until golden on both sides. Add the tomatoes and cook for 5 minutes. Add the fresh rosemary and oregano, cover and bake in oven for 20 minutes. Uncover the skillet, add the wine, and continue cooking for 10 minutes. Remove skillet from the oven, cover it, and let it rest as you prepare the polenta.

Method for the Polenta: Add water, salt, and EVOO to a medium saucepan and bring the water to a boil, then stir in the polenta. Continue stirring until the polenta starts to thicken. Remove from heat.

Presentation: Place a bed of polenta on two plates. Arrange the swordfish, tomatoes, red peppers, and mushrooms over the polenta. Spoon the sauce over the top of each. Garnish with fresh rosemary and oregano.
