Bottle Notes: “The 90-+ Cellars Reserve Series is a curated selection of small production wines from the world’s greatest wine regions. Visit ninetypluscellars.com to see our full range of wines from around the world. 2022 Sancerre AOC, Vallée de La Loire, France, Lot 196. In France’s Central Loire Valley lies a small village, Sainte Gemma, with vineyard soils composed of clay and limestone. This is where the Pinot Noir grapes for this Sancerre Rosé are grown. The wine receives its pale pink color by allowing the skins of the grapes to mix with the juice for a short time, after which they are delicately pressed and fermented. The supple texture of the wine is a result of the fine lees aging that the wine undergoes before bottling. Lively on the palate, this Sancerre rosé pairs well with grilled halibut topped with a fresh peach salsa or just savored on its own. Preferably in the sunshine.”
Tasting Notes: The color is a stunning pale pink. On the nose there are floral notes, apple blossom, citrus and strawberry notes that follow through on the palate. This is a lovely silky, summer, sipping wine that also pairs well with food.

In the summer, we love to serve chilled soups to our guests as an easy but elegant way to start a memorable meal. We followed our soup course with a delectable crab and fruit salad for a refreshing and light finish that is perfect for easy summertime entertaining.

Our chilled soup, Luxury Experience – Chilled Beet, Carrot, and Orange Soup is a delectable mélange of beets, carrots, red onion, chicken stock, orange juice, and is finished with 90+ Cellars Lot 196, 2022 Sancerre Rosé AOC to round out its flavors. Easy to make, easy to love, and perfect for entertaining, as it needs to be made ahead. We like to serve this soup with caviar toast for an elevated dining experience.

Method for the Soup: Steam the beets until tender; set aside. Steam the carrots until tender; set aside. Heat a saucepan, add the EVOO, then the red onion, and a little salt and pepper. Cover and sweat the onions until tender, but not brown. Add the chicken stock and bring to a boil. Lower heat and simmer 10 minutes.
Add the onion stock mixture to a blender and puree until smooth. Add the beets and puree until smooth. Add the carrots and puree until smooth. Add the orange juice and blend until smooth. Adjust salt and pepper if needed, let cool. Add the wine and chill for several hours or overnight.
Presentation: Garnish soup with thin ribbons of orange zest, and for an elegant touch, serve with caviar toast. For the toast, we used a small round cutter to cut homemade grain bread into rounds and toasted them. We topped the toast rounds with homemade labneh (you can also use sour cream) and finished them with caviar.
Pro Tip: Wear disposable gloves to peel and dice the beets.
Luxury Experience – Crab and Fruit Salad
Our crab salad plays up the strawberry and citrus notes of the Sancerre Rosé. We paired crabmeat with sliced strawberries, sliced fresh pineapple, diced green pepper, and fresh mint. All this salad needs is a squeeze of fresh lemon juice to finish it for a delicious and refreshing summer salad.
