Technical and Bottle Notes: “Grown on our Amherst estate, this wine boasts crisp, cool mineral notes on your palate and great structure. A versatile wine. First made in 2016 from a blend of white grapes grown in The Vineyard at LaBelle Winery, this estate wine is crisp and easy to drink with its balanced acidity. On a cool morning in October, we harvest our white grapes from The Vineyard at Labelle Winery. Each year, we blend them into this special, limited release wine that boasts crisp, cool notes, great structure and minerality.”

Pairing Bottle Notes: “Pairs well with starter or salad courses, seafood, poultry, or Asian dishes.”

Tasting Notes: The color is pale yellow with rich, crisp aromatics on the nose. On the palate, lemony citrusy notes and minerality provide complexity and structure to this crisp and elegant wine.

Luxury Experience – Artichoke and Green Chile Mousse

Luxury Experience – Artichoke and Green Chile Mousse
Serve as an appetizer or starter course.

Ingredients:

Trader Joe’s Artichoke Hearts, drained, rinsed, small diced

Trader Joe’s Diced Green Chilies, drained

Trader Joe’s Nonpareille Capers, rinsed, drained

Horseradish (optional, or to taste)
Black Pepper, to taste

Method: Add 1 envelope of unflavored gelatin to one-quarter cup of chilled LaBelle Winery Amherst Vineyard Estate White. Stir to blend and let rest.

Add mushroom soup (do not dilute) to a saucepan and heat over medium-low heat to melt. Add cream cheese and stir until melted. Add the gelatin, stir to combine, and remove from heat. Let cool a few minutes and then add artichokes, green chilies, celery, mayonnaise, horseradish, and black pepper. Stir to thoroughly combine.

Pro Tip: Line mold or a loaf pan with plastic wrap, then spoon the artichoke mixture into the pan. Let cool. Cover with plastic wrap refrigerate several hours (or overnight) to set. Plastic wrap will keep the mousse from sticking to the pan and makes quick clean-up.

When ready to serve, invert the pan onto a serving platter. Decorate the top of the mousse with thinly sliced artichoke hearts and cornichons (optional). Serve with crackers, thinly sliced baguette toast, or crudities.
