Bistro Napa – Atlantis Casino Resort Spa
Bistro Napa is one of the two fine dining restaurants at the Atlantis Casino Resort Spa; the other restaurant is the Atlantis Steakhouse, where they alternate their Spirited Dining Series Dinners held throughout the year. We had the pleasure of experiencing the El Fogonero Tequila Spirited Dining Dinner on Thursday, July 25, 2019. Their Spirited Dining Series Dinners are very popular, and more than 120 people signed up to experience an evening of learning about El Fogonero Tequila complemented by exquisite cuisine created by Chef de Cuisine Clayton Slieff and h is team, and creative pairing cocktails by Master Mixologist Steven Sedillos. It was a memorable evening of dining and cocktails and learning about the award-winning El Fogonero Tequila.

Butter Poached Lobster Tamale
The first course of Butter Poached Lobster Tamale with White Corn Masa, Roasted Tomatillo Salsa, and Jicama Slaw, was a great introduction to Chef Clayton Slieff’s culinary vision to complement Steven Sedillo’s El Fogonero cocktail, Veni, Vidi, Verde, (I came, I saw, green), which he created with the Blanco Tequila and included a house-made tomatillo shrub in the cocktail to play up the nuances in the culinary presentation. The pairing of cuisine and cocktail was spot on.
Chile Relleno Con Pollo
For the second course, there was Chile Relleno Con Pollo with Fire Roasted Peppers, Chicken Confit and Queso Blanco, with Pepita-Cumin Rice and Prickly Pear Salsa, paired with the cocktail, Prickly Pear Paloma made with El Fogonero Reposado Tequila, and for those who preferred seafood, there was pan-seared swordfish instead of the chicken.

This was another wow of a presentation that followed through on the palate in both the culinary portionas well as the cocktail. For this pretty pink pairing cocktail, Steven and Holly Buchanan, Beverage Manager, half-rimmed each glass with a mixture of cumin and salt to pick up the nuances of the cumin rice. Steven also used prickly pear juice in the cocktail which was another great pairing of cuisine and cocktail showcasing El Fogonero.

For the third course, Chef Clayton Slieff created Rojo Pulled Pork, Frijoles Negros, Shredded Cabbage, Roasted Tomato Salsa, Chucky Guacamole, topped with Sand Hill Dairy Habanero Cheddar, and for those who preferred seafood there was Pan-Sautéed Alaskan Halibut. This was another pairing that worked well with the theme of the dinner.

For the fourth course there was West Texas BBQ House-Smoked Chipotle Rubbed Tri-Tip, Chorizo Rancho Beans, Fire Roasted Corn with Guajillo Chile and Sand Hill Dairy Queso Fresco, or BBQ Shrimp accompanied by El Fogonero Extra Añejo served neat. El Fogonero only produced 1,000 bottles of this very special Extra Añejo so it was a treat to be able to experience this extremely smooth and delightful sipping tequila.

For the dessert course, Sopapillas Con Helado, New Mexico-style Puffed Pastry, with Honey-Orange Ice Cream with Pine Nuts, Dulce de Leche, Chef Ravyn Rodrigues from Toucan Charlie’s (their upscale buffet restaurant) assisted the Bistro Napa team to deep dry the sopapillas, and Executive Pastry Chef Kayline Johnson contributed he rdelectable honey-orange ice cream. It was a great creation utilizing many of the talented chefs and their teams at the Atlantis Casino Resort Spa to create a most memorable evening of dining, cocktails, learning, and making new friends at Bistro Napa.

Bistro Napa has a very creative cocktail menu, including a Cotton Candy Martini, made with pink cotton candy, made in-house! Master Mixologist Steven Sedillos graciously shares the recipe for this amazing cocktail. Do not be frightened of the cotton candy, the fresh lemon juice adds enough acidity to make this a tasty, but not overly sweet cocktail.
[Editor’s Note: Although Bistro Napa makes their own cotton candy, you can use ready-made store-bought cotton candy to create this special cocktail at home.]

Background Information on El Fogonero Tequila
"El Fogonero is a small family run distillery located in Amatitan, in the Lowlands of Jalisco. The family performs all stages of the production process including the making and labeling of bottles, as they have been producing high-end tequila for over 4 generations!
A fogonero is a "stoker" or the main person in charge of cooking the agave so it can later be crushed to extract the juices for tequila production.
El Fogonero’s history begins with Don Antonio Yera, who started working for Herradura around the mid 1920’s at the young age of 16. He spent the next 50 years working as a fogonero for Herradura, one of the largest and most respected high-end tequila producers in Mexico. In that time, he learned much about tequila production, as he continuously perfected and fine-tuned his craft for virtually his entire life.He had a dream of one day producing his own tequila.
When he retired in the 70’s, he continued working in the agave fields and passed on what he had learned to his 3 grandsons Jesus, Rigoberto, and Antonio.
In 1997, the 3 grandsons officially founded the company, and in honor of their grandfather, named the tequila" EL FOGONERO". The distillery is in the lowlands of Jalisco in the town of Amatitan (same town as Herradura) and this region is famous for producing some of the best tequilas in all of Mexico."
