Bottle Notes: “Wheel Horse is crafted and matured at Green River Distilling in Owensboro, Kentucky. As the 10th oldest permitted distillery in the state, Green River has a rich history that dates back to the late 1800s. Our Rye is distilled in copper stills and is aged in 53-gallon new charred oak barrels for a minimum of three to four years. The whiskey is made from a mash bill of 95% rye and 5% malted barley, and is bottled at 101 proof, non-chill filtered. Bottled by Latitude Beverage Co. in Rumford, Rhode Island.”
Tasting Notes: The color is a rich copper. Sweet aromas on the nose, followed by a rich and powerful mouthfeel, hints of citrus on the palate, with nice viscosity that gives it “long legs” and a delectable lingering finish.

The Cocktails
Fresh pineapple brings out the elegant notes of this exceptional Rye. For Luxury Experience – Pineapple Upside Down Cocktail, we took a slice of fresh pineapple, topped it with brown sugar, and melted and caramelized the sugar onto the pineapple with a kitchen torch, then added the rest of our ingredients.

Method: Place the pineapple slice on a small plate, and top with brown sugar. Use kitchen torch to melt and caramelize the sugar. Place the pineapple slice in the bottom of a snifter glass, add three cherries to the center of the pineapple. Mix the Wheel Horse Straight Rye Whiskey and fresh pineapple juice together in a mixing glass and pour it over the pineapple. Top with ice.
Peaches work well with Rye and for our cocktail, Luxury Experience – Rye? Because I Love You, we blend Wheel Horse Kentucky Straight Rye Whiskey with Goya Peach Nectar, fresh lemon juice, Fee Brothers Peach Bitters, and top it with plain seltzer. Garnish with a slice of fresh peach. For extra pizazz we like to use a round ice cube frozen with a lemon peel in it, which adds flavor to the cocktail as the ice slowly starts to melt.

Method for the Sauce: Melt the butter, add brown sugar, let sugar melt, then add the Goya Peach Nectar, and Fee Brothers Bitters. Reduce a little, then slowly add the Wheel Horse Kentucky Straight Rye Whiskey. Reduce to create a sauce. Set aside, as you cook the pork chops.

Method for the Pork Chops: Salt the chops on both sides. Heat a sauté pan. Add the EVOO, and fat trimmed from the chops to the pan (to add additional flavor). Add chops and sauté on both sides until almost done. Spoon peach sauce over the chops, cover and cook until chops are cooked through. Remove chops to cutting board and let rest.

Method for the Peaches: Remove the cooked fat from the sauté pan and discard. Add the sliced peaches and sauté them until tender.
Presentation: Slice the chops widthwise and place on creamy mashed potatoes. Place a sauteed peach slice between each of the pork slices. Pour the remaining pan juices over the pork and peaches. Accompany with a side of baby Brussels Sprouts or your favorite vegetable.
Our dessert, Luxury Experience – Peach Caramel Kisses is “easy to make, easy to love” as we use purchased puff pastry. Filled with sauteed peaches with brown sugar, Fee Brothers Peach Bitters, and flambeed with a little Wheel Horse Kentucky Straight Rye Whiskey, this is a recipe that anyone can make. For added impact, we finished the dessert by creating an easy to make caramel and brushed it over the hot baked pastry and drizzled some caramel on the plate as well. Serve warm from the oven or at room temperature.

Method for the Peaches: Melt butter in a sauté pan. Add peaches and cook for 1 minute. Add brown sugar, Fee Brothers Peach Bitters, and Wheel Horse Kentucky Straight Rye Whiskey and let the alcohol evaporate.
Caution: If you want to flambé the peaches, remove pan from the heat, do not use a downdraft and light with a long match. Flames will self-extinguish. You do not need to flambé the peaches.
Set peaches aside while you prepare the pastry.

Method for the Pastry: Thaw one sheet of purchased puff pastry. Place the dough on a sheet of parchment paper lightly sprinkled with flour. Roll pastry out then cut into 4 pieces. Place 4 of the cooked peaches on each of the pieces of dough towards the front (the end closest towards you). Fold the pastry over and flute the ends. We like to use fresh chives to tie the ends as they will hold the shape and dry out when baked.
Mix egg white and water and brush over filled dough. Place dough on a parchment paper lined baking sheet.
Bake at 400 degrees Fahrenheit (204 degrees Celsius) for about 10 – 15 minutes, or until the pastry is golden.

Method for the Caramel Sauce: Melt butter in a medium saucepan. Add brown sugar and Fee Brothers Bitters. Cook until sugar starts to melt. In another saucepan, heat heavy cream. When cream starts to boil, remove the pan from the heat and pour the cream over the butter and brown sugar mixture. Whisk continually until caramel forms.
Presentation: Brush caramel over the baked pastry, place on 4 plates, and drizzle some extra caramel on each of the plates.
