We love all things pistachio and were delighted when we found Fabrizia Crema di Pistachio Cream Liqueur, made by Fabrizia Spirits in Salem, New Hampshire. Brothers Phil Mastroianni and Nick Mastroianni make this totally delicious pistachio cream liqueur from toasted pistachios and real cream, with the result yielding volumes of rich flavor. We used it in a variety of cocktails and culinary recipes, including homemade Luxury Experience – Pistachio Ice Cream, and Luxury Experience – Double Dark Chocolate Pistachio Cake with Pistachio Cream Filling, Dark Chocolate Glaze, and Pistachio Brittle.

Fabrizia Crema di Pistachio Cream Liqueur is luscious to sip chilled on its own or to use in creative cocktail and culinary recipes. You can create a Pistachio Martini by adding it to your favorite vodka or gin. What we especially liked about this liqueur besides its deliciousness, is that they use natural ingredients of real cream, and toast the pistachios to bring out the richness of the nut.

Luxury Experience – The Philosopher

Our cocktail, Luxury Experience – The Philosopher, is a semi-frozen “treat” made with Fabrizia Crema di Pistachio Cream Liqueur, (cold) Hot Chocolate, and Zarpado Tequila Blanco. We dressed the rim with melted dark chocolate and crushed pistachios for a perfect finish.

Cocktail Ingredients:

Melted Dark Chocolate, for the rim
Reserved Crushed Pistachios, for the rim

Method for the Rim: Place crushed pistachios on a saucer and set aside. Melt chocolate and pour into a saucer. Gently twist the rim of (2) rocks glasses in the chocolate, then into the crushed pistachios. Set them aside while you make the cocktail.

Pro-Tip: You can rim the glasses ahead of time, making this cocktail perfect to serve for parties or at a bar as your specialty drink.

Homemade Hot Chocolate Ingredients:

Method for the Homemade Hot Chocolate: Mix cocoa and sugar in a small saucepan. Slowly add milk and stir until smooth. Heat milk to boiling point to dissolve the sugar. Remove from heat and let cool.

Method for the Cocktail: Mix cocktail ingredients in a mixing glass, then divide into (2) glass jars. Place jars in the freezer for 2 hours so the mixture is semi-frozen. Spoon into chocolate and nut rimmed rocks glasses.

Note: While we like to serve this cocktail semi-frozen, you can also make the cocktail and serve it over ice or serve hot.

Café Crema Ingredients: 

Method for the Coffee: Place (1) STEEPED COFFEE – California Blend filter in a mug or cup and pour 8 ounces of hot water over it. Dunk the filter for 15-20 seconds, steep for up to 5 minutes to preferred taste.

Method for Café Crema: Pour 4-ounces of STEEPED COFFEE into each of the Coffee Glasses, add 2 ounces of the Fabrizia Crema di Pistachio Cream Liqueur to each glass. Coffee was never so delicious!

Chocolate lovers will love our recipe for Luxury Experience – Double Dark Chocolate Pistachio Cake with Pistachio Cream Filling, Dark Chocolate Glaze, and Pistachio Brittle. Paired with Luxury Experience – Pistachio Ice Cream, it is a dream of a presentation and a palate pleaser. This delectable dark chocolate cake uses Fabrizia Crema di Pistachio Cream Liqueur in the cake batter, in the filling, and in the homemade ice cream.

Luxury Experience – Double Dark Chocolate Pistachio Cake with Pistachio Cream Filling, Dark Chocolate Glaze, and Pistachio Brittle

Yield: (9) mini cakes using half-cup molds or (1) 8-inch round single layer cake

Note: We like to make the cake in individual molds, however you can also make it as a layer cake.

Ingredients for the Cake:

Method for the Cake: Preheat oven to 300 degrees Fahrenheit (149 degrees Celsius).

Add all ingredients to a food processor or bowl of a standing mixer. Beat until incorporated and smooth.

Grease and flour, or use Baking Spray to prepare pan, pour cake batter in the molds or cake pan. Bake for 30 minutes or until cake tester comes out clean. Remove from oven and set on racks to cool. Remove from the molds or cake pan. Let cool.

Pistachio Cream Filling Ingredients for the Pistachio Cream:

Method for the Pistachio Cream: Add egg yolks, sugar, cornstarch and salt to a food processor and process until smooth. In a medium saucepan, heat the milk and heavy cream until bubbles form on the side of the pan, but not boiling. With the food processor running, slowly add 1 tablespoon of hot milk to the egg mixture to temper the eggs so they will not curdle. Continue to slowly add the remaining milk to the egg mixture, and process until smooth.

Return mixture to the saucepan and cook over medium heat continuously stirring until mixture thickens. Remove from heat and whisk in the Fabrizia Crema di Pistachio Cream Liqueur. Pour mixture into a bowl, press plastic wrap on the top of the cream filling so that it does not form a skim on it. Let cool at room temperature, then refrigerate for several hours.

Method for Filling the Cakes: We turned the cakes upside down on a sheet of parchment paper and used a round, deep cookie cutter to create a deep hole in the center of each of the cakes. Place the pistachio cream filling in a piping bag and pipe the cream into the hole of each of the cakes. Turn the cake filling side down onto the parchment paper covered baking sheet, cover the cakes with plastic wrap, and place them in the freezer.

Dark Chocolate Glaze – Ingredients:

Method for the Glaze: Add dark chocolate and light corn syrup to a bowl and mix to combine. Scald heavy cream in a saucepan over medium heat. Pour hot cream over the chocolate and corn syrup mixture and whisk until very smooth. Let rest for 5 minutes, then add butter and Fee Brothers Aztec Chocolate Bitters.

Method for Glazing the Cake: Place cakes filling side down (if made as individual cakes) on a baking rack over a baking sheet. Pour glaze over the cakes to cover. Let set. Refrigerate until ready to serve.

Method for the Brittle: Place a sheet of parchment paper on a baking sheet. Add sugar to a sauté pan and heat until sugar starts to melt, add pistachios and turn to coat. Turn the candied nuts onto the parchment paper and let dry.

Presentation: Place each cake onto a plate, add a scoop of Luxury Experience – Pistachio Ice Cream, garnish the ice cream with the brittle, and scatter some reserved toasted pistachios onto the plate.

Method for the Ice Cream: In a blender or food processor mix Âľ of a cup of sugar with Âľ of a cup of salted pistachio nuts. Slightly beat 2 eggs. Pour Half & Half in a sauce pan on medium heat, add the sugar/nut mix and stir for a few minutes, add the slightly beaten eggs and continue constantly stirring mixture. Heat the mixture to 155 degrees Fahrenheit (68 degrees Celsius).

Let the mixture cool down to room temperature and then add 11 ounces of heavy cream and give the mixture a few stirs. Cover and place the mixture in the refrigerator overnight.

The next day strain the mixture to reserve the nut meat for use in the Pistachio Brittle recipe.

Pour the strained mixture into the ice cream maker of your choice, we use a Whynter Ice Cream Maker. Initially add 2 ounces of Fabrizia Crema di Pistachio and then another 2 ounces after 10-minutes. Initially add 1/3 of a cup of whole salted pistachio, then add 1/3 of a cup after 10 minutes and 1/3 of a cup after 20 minutes (add additional 1/3 to 1/2 cup  salted pistachio nuts if desired). Mix the ice cream until it is firm and thick, it should be pulling away from the sides of the chilling container. Remove from chiller, place the ice cream in a container in the freezer and ENJOY!!
