Pommery Champagne has been renowned for its excellence and quality around the world since the 19th century. In 2019 they launched their first still wine in California under the Louis Pommery label, to complement their California sparkling wine. The House of Pommery, whether in Reims, France facility or in California, believes in “precision, innovation, and elegance.” They do things differently, and harvest their grapes at night, followed by slow pressing to exact the most juice, separating the free-run juices, and partial malolactic fermentation. The result is an elegant Chardonnay with layers of flavor nuances, mineral, and earthy notes, along with fresh floral and lemony notes on the aromatic nose that follow through beautifully on the palate. With a retail price of around $25, it is a wonderful wine to enjoy now or store for a few years, if you can wait that long.

Bottle Notes: “Louis Pommery Carneros Chardonnay – single vineyard. The parcel at Los Carneros, which we have been following for years, offers a wine of great finesse and elegance, where the fruit expresses itself in all its fulness.”

Technical Notes: Made from 100% Chardonnay grapes sourced from a single plot in Los Carneros. Harvest was done at night, slow pressing, separating free-run juices, with partial malolactic fermentation. In 2019, they “decided to create Louis Pommery Carneros, a still Chardonnay made from grapes of a single vineyard in Los Carneros. This wine has been vinified in the French tradition (“Chablis style”) resulting in a wine with minerality, well-balanced and elegant.” 

Tasting Notes: The color is an attractive pale straw. The nose has layered nuances of mineral and earthy notes along with floral and citrus notes, which follow through on the palate for a delectably crisp and luscious finish.

Pairing Suggestions: While this wine would be well paired with shellfish, or a white fleshed fish with a creamy sauce, we opted to consider its California roots and paired it with our recipe for Luxury Experience – Savory Avocado and Goat Cheese Cheesecake.

Luxury Experience – Savory Avocado and Goat Cheese Cheesecake combines cream cheese, goat cheese, avocado, eggs, fresh sage, and seasoning, on a base of seasoned Italian dry breadcrumbs and butter. Baked then allowed to cool, we spread a layer of pureed sundried tomatoes over the top of the cheesecake, and then crowned it with ripe, sliced tomatoes, garnished with micro-basil leaves. This savory cheesecake is perfect to serve as an appetizer, first course, serve it alongside an arugula salad with lemon vinaigrette for a heartier option, or serve as a cheese course at the end of the meal. This is a rich and creamy cheesecake that pairs beautifully with the Louis Pommery Carneros Chardonnay 2022.

Equipment: 7-inch (17.8 cm) Spring form pan

Pro-Tip: Spray springform with a little vegetable oil. Cut parchment to fit on the bottom and sides of the form. This makes removable easy.

Ingredients for the Crust:

Salted Butter (56.5 grams/half stick butter)

Seasoned Italian Breadcrumbs (dry)

Method for the Crust: Add butter and breadcrumbs to a food processor and process until well incorporated and breadcrumbs will hold together. Place crumb mixture in the bottom of the prepared spring form pan. Press down lightly with your hands or use a small rolling pin to compact the crumb base evenly. Refrigerate while you make the filling.

Note: With butter-based crusts, you should always chill at least 15 minutes before baking.

Method for the Avocado Cheesecake: Preheat the oven to 350 degrees Fahrenheit/177 degrees Celsius.

Remove the crust from the refrigerator and set it aside.

Add all ingredients to a food processor and process until smooth and creamy. Using a spatula, carefully spread the filling over the crust.

Bake for approximately 20 minutes until cheese is set and tester inserted in middle comes out clean. Remove from the oven and cool on baking rack. When cool, place the cheesecake in the refrigerator and chill for a few hours. (Can be made the day before serving).

Ingredients for the Tomato Crown:

Sundried Tomatoes, about one-half cup

Cherry Tomatoes, sliced
Fresh Micro-Basil Leaves

Method for the Sundried Tomato Puree: Add EVOO and sundried tomatoes to a small saucepan and heat to soften the tomatoes. Remove from the heat. Puree in a mini-chopper or use an immersion stick blender.

Spread puree over the baked cheesecake. Crown with sliced cherry tomatoes, and garnish with micro-basil leaves.
