After reading Seriously Good Chili Cookbook – 177 of the Best Recipes in the World by Brian Baumgartner I learned that there are many ways to make chili, including Chili Con Carne (with meat), Chili Verde, White Chicken Chili, Texas Chili, Cincinnati Chili, Turkey Chili, Vegetarian Chili, Black Bean Chili, and many more. It seems the possibilities for chili recipes are as endless as the imagination and creativity of the chefs behind them.
In addition to 177 great chili recipes in the cookbook, and the history of chili with fun facts, what I also found interesting was the inclusion of the Hot Pepper Heat Scale, outlining the 10 levels of heat ranges and the peppers that fall into each category. This is a great resource for learning about and distinguishing various types of peppers and their level of heat. Fans of The Office, will also be happy to know that "Kevin Malone’s" famous chili from the episode where he dropped it on the carpet, is included in the cookbook.

Directions: In a large pot, sauté the chopped onion, green bell pepper, and garlic in oil over medium-high heat. I like to use grapeseed oil because it’s a little less oily. Add in the ground turkey or beef. Before the meat has completely cooked, add the tomato paste. Finish browning the meat completely.
Stir in the remaining ingredients, except the beans and the cheese. Bring to a boil. Reduce heat. Cover and simmer on low heat for 30 minutes (or longer until the desired consistency is reached), stirring occasionally. Then, 20 minutes before serving, add the beans. You can’t add the beans in right away or they will get mushy. Finish with sharp cheddar cheese. Any leftovers are easy to freeze!

Cheddar Cheese, grated, to taste

Directions: Drain, rinse, and soak the beans in cold water. While the beans soak, heat a large saucepot. Add the oil, garlic, onions, and carrots. Cover and sweat until the onions are translucent. Add the green bell peppers and jalapeño and sauté for 2 minutes. Add the corn and sauté for 3 minutes. Add the zucchini and sauté for 2 minutes. Add the diced tomatoes. Drain the beans. Add the beans to the tomatoes and vegetables. Then add the ketchup, maple syrup, sriracha, and salt and pepper to taste. Stir to combine. Bring to a boil. Reduce the heat and simmer for 1 hour. Finish with the bourbon and grated cheddar.
