| Memorable is the best word to describe our dining experience at Restaurante Marruá in Bonito, Mato Grosso do Sul, Brazil. Set inside the upscale Marruá Hotel, the restaurant gets high marks for the quality of their kitchen and inspired cuisine from the talented Chef Sylvio Eduardo Trujillo. Attractive surroundings and attentive, professional service complement the inspired Contemporary and Regional cuisine from this gastronomic kitchen.
We had a marvelous dinner at Restaurante Marruá during our stay in Bonito, in the state of Mato Grosso do Sul, Brazil on March 20, 2019. Executive Chef Sylvio Eduardo Trujillo is the talent in the kitchen who honed his culinary skills at top restaurants in São Paulo, Brazil before making Bonito his home 13 years ago. While Bonito is a much more relaxed, laid-back city than the sophisticated metropolis of São Paulo, Chef Sylvio Eduardo Trujillo maintains the same level of high quality and inspired cuisine at Restaurante Marruá.
Sesame Crusted Salmon
Chef Sylvio Eduardo Trujillo began our dining experience with a visually stunning first course with his creation of sesame crusted salmon presented with wasabi cream artistically brushed on the plate, accompanied by grilled cherry tomatoes left on the vine and sautéed mushroom caps, and a small bowl of ginger soy dipping sauce. The combination of flavors on the palate worked beautifully and the salmon was well paired with a Chilean wine, Carmen Insigne, Chardonnay, 2017,D.O. Valle Central, Chile, 13% alcohol.

Just when we thought it could not get any better, Chef Sylvio Eduardo brought out the maincourse of Pintado, a regional freshwater catfish, glazed with an orange vinaigrette, and garnished with chopped orange, sliced chili to add color and a bit of heat, finely sliced red onions, and cilantro. He nestled the fish on a bed of manioc (cassava), a typical ingredient of the region, that he had pureed, seasoned with crème Chantilly and parmesan cheese and grilled it to perfection for an unusually delicious blend of flavors. This course was a delicious marriage of style and taste, and the Carmen Insigne, Chardonnay, 2017, also worked well for the pairing wine for this course.
Freshwater catfish (pintado)
For dessert, Chef Sylvio Eduardo worked his culinary magic to create an inspired dessert of varying layers of textures and tastes for a rewarding finish to an amazing dining experience at Restaurante Marruá. Presented in a wine goblet, he layered pastry cream with strawberries marinated in a blend of balsamic vinegar and honey which gave them a rich mouthfeel and added crispy meringues to add texture and a bit of sweetness. Crowned with whipped heavy cream mixed with honey and garnished with mint, the dessert was the crowning touch as a showcase for Chef Sylvio's style. The dessert was paired with another wine from Chile, Morandé Late Harvest, Sauvignon Blanc 2015, D.O. Casablanca, Valle de Casablanca, Chile, 12% alcohol, which was delectable. Late Harvest wines are only produced when the conditions are optimal and 2015 was a phenomenal year.
A defining mark for any exceptional restaurant aside from the cuisine, is the service, and from start to finish, we were impressed with the attentive service from the professional staff as well as Chef Sylvio Eduardo Trujillo's culinary style.
