Technical Notes: “The 2021 vintage experienced regular seasonal development. Harvesting commenced in the 4th week of September as per past vintages. Fermentation in steel tanks, with maceration for 22 days at a temperature of 28-30 degrees Celsius (82.4 – 86 degrees Fahrenheit). Malolactic fermentation and aging in wood for 24 months. Refinement in French oak tonneaux of 500 liters. Bottle aging for 8 months.”
Tasting Notes: The color is deep ruby, with heady aromatics of violets, blackcurrants, and tobacco notes on the nose. On the palate, the prevailing tannins and acidity typical of Sangiovese grapes come through with ripe fruit juicy notes. This is a full-bodied intensely delicious wine that pairs well with a variety of food.

Luxury Experience Pairing: We wanted to create an easy, yet elegant and very tasty pairing for the wine, and created Luxury Experience – Beef Loin, Mushrooms, and Pearl Onions in Puff Pastry.
We used Australian grass-fed beef loin flank steak sauteed with mushrooms and pearl onions, then kissed with San Felice La Pieve Chianti Classico Gran Selezione DOCG 2021 to create a rich and flavorful gravy and encased it in (store-bought) puff pastry and baked it to golden perfection. Mangia bene!
The Recipe for Luxury Experience – Beef Loin, Mushrooms, and Pearl Onions in Puff Pastry

Equipment: Two 4-inch pie plates, or 1 medium pie plate

Preheat oven to 400 degrees Fahrenheit (204 degrees Celsius)
Method for the Beef: Cube beef into bite size pieces. Season with salt and pepper, add EVOO and gently massage into the beef to thoroughly coat.
Heat a sauté pan, add 1 tablespoon of EVOO, minced rosemary and onions. Sauté until onions are golden. Add mushrooms and sauté until golden. Push to the side of the pan. Add the beef and sauté until medium rare. Mix the San Felice La Pieve Chianti Classico Gran Selezione DOCG 2021 with 1-teaspoon cornstarch and add to the meat to create a gravy. Remove pan from heat.
Method for the Puff Pastry: Thaw dough (in refrigerator or on the counter). You want the dough to be thawed but still cold when you roll it.
Roll puff pastry between 2 sheets of parchment lightly dusted with flour so the pastry will not stick. Using your pie plates as guides, turn the pie plates upside down on the pastry and cut 4 round circles slightly larger than the plates.
Lightly spray the pie plates with vegetable oil, then arrange a circle of pastry in each pie plate. Top with the beef mixture, lightly wet the edge of the bottom pastry, then cover with another circle of pastry and press edges to seal. You can crimp the edges using your fingers or the tines of a fork to create a decorative edge. Brush with egg wash and bake until pastry is golden.
