Bottle Notes: “Pouilly-Fumé is notably one of France’s most famous white wines. Here on the right bank of the Loire River, Sauvignon Blanc is in its purest form, aromatic and lively with a spark of minerality. The grape bunches are delicately pressed and allowed to settle before a natural fermentation. The wine is then left to mature in the lees for several months, producing a beautiful perfume and a silky texture.”
Technical Notes: “Hand-harvested and lightly pressed prior to fermentation in stainless steel under controlled temperatures. Matured for several months on the fine lees before bottling in the spring following the vintage.”

Luxury Experience – Homemade Truffle Gnocchi with Shitake & Brown Beech Mushrooms
We opted to pair this gorgeous wine with our recipe for Luxury Experience – Homemade Truffle Gnocchi with Shitake and Brown Beech Mushrooms in a Wild Mushroom Brie Sauce, which really highlighted the lovely minerality of the wine.
We made homemade gnocchi (do not be afraid to make these, they are easy to make, and easy to love) to complement the nuances and layers of flavors of the wine. We made the gnocchi together and think that it would be fun for a couple, family, or group of friends to make them together. The gnocchi also freeze well so you can make them ahead and boil them as needed.
Luxury Experience – Homemade Truffle Gnocchi with Shitake and Brown Beech Mushrooms in a Wild Mushroom Brie Sauce
Serves: 6 (makes approximately 150 gnocchi)

Method for the Gnocchi: Wash potatoes (leave their skins on), add to a large pot, add enough water to cover them, add 2 tablespoons Black Truffle Salt to the water, and boil until tender. Drain into a colander. When still warm, but cool enough to handle, peel skins from the potatoes.
Use a potato ricer (they will make fluffier potatoes than mashing them) to rice the potatoes onto a clean work surface. Sprinkle 1 teaspoon of Black Truffle Salt over the potatoes (we love the aromatics that rise off the warm potatoes). Let the potatoes cool completely.
Make an indentation in the middle of the potatoes then add the egg and gently fold together. Add the flour a little at a time, folding gently until it is all incorporated. This is best done with your hands, not a food processor, as it would release too much gluten and make the gnocchi tough. Knead for about 2 minutes to combine all ingredients.
Next is the fun part – rolling and cutting the gnocchi! Gather the gnocchi dough into a smooth ball. Using a bench scraper (or a sharp knife), divide the dough into 4 equal sections. Roll each section onto a lightly floured surface, into a long rope (about a half inch to three-quarters of an inch in diameter).
Cut each of the ropes into ¾ to 1-inch pieces. To give the gnocchi its distinctive grooves, you can roll the back of the tines of a fork over the gnocchi or use a wooden gnocchi board. We used a grooved cheese cutter to create the grooves on our gnocchi.
Bring a pot of water to a boil, add 2 tablespoons of Black Truffle Salt to the water, then boil the gnocchi in small batches until they float on the top, then let boil for another minute. Drain the water.

Method for the Sauce: Heat a medium size sauté pan over medium heat, add the butter, then the mushrooms and black truffle salt. Sauté until the mushrooms are golden brown. Remove from the pan, cover the mushrooms, and set aside.
Add the Trader Joe’s Triple Cream Brie Cheeses with Wild Mushrooms to the sauté pan. Add the Pouilly-Fumé AOC, Lot 171, Reserve Series, 2023, 90+ Cellars, and cook until you have created a smooth sauce.
Plating and Presentation: Place gnocchi in each of the bowls. Top with the sauce, garnish with the mushrooms, and drizzle with Truffle Oil. Add fresh sage or other herbs to garnish the plate.
