Bottle and Technical Notes: La Clé la Femme Champagne Brut, Comte de Valandy is from the Aube Valley just south of the heart of Champagne, France where they hand harvest the grapes.
Tasting Notes: Very active bubbles enticed and engaged the eyes and caressed the flute glass. The clay and limestone terroir were notable on the aromatic nose and on the palate. The champagne was crisp and elegant with sweet honey, white peaches, pears, and green apple notes on the nose. Fruity, white peaches, honey, melon, citrus, and green apple notes followed through on the palate for a delectable finish.

We paired this effervescent champagne beauty with Epoisses cheese, roasted red peppers drizzled with EVOO, crushed garlic, salt, pepper, and basil, and served them with toasted baguette slices. The crisp and fruity notes of the champagne really worked well as a companion to the pungent French cheese and made for a lovely repast.
We also created a luscious dessert to pair with La Clé la Femme Champagne Brut, Luxury Experience – Peach Almond Crisp made with fresh peaches, butter, brown sugar, flour, oats, vanilla, salt, and toasted almonds to play up the layered flavors of the champagne.

Method for the Peach Almond Crisp: Preheat oven to 350 degrees Fahrenheit/177 degrees Celsius.
Butter a 9×9-inch glass baking dish. Arrange peaches on the bottom. Sprinkle 1-tablespoon brown sugar over the peaches and set aside.
Add the rest of the ingredients (except the handful of almonds) to a food processor and process until mixture is incorporated and comes together. Spoon mixture evenly over the top of the peaches. Scatter a handful of toasted almonds over the top.
Cover with foil and bake for 45 minutes, remove foil, and bake for an additional 15 minutes or until crisp is golden brown.
Presentation: While you can serve this dessert warm, at room temperature, or cold, we like to serve it when it is still slightly warm. Spoon a portion of Luxury Experience Peach Almond Crisp into a bowl. Top with your favorite ice cream or a dollop of fresh whipped cream, and pair it with a glass of La Clé la Femme Champagne Brut.
