To learn more about ERGO CHEF, we took a drive to Danbury, Connecticut to meet with Scott Staib, President, and learn the interesting story behind the designs. Scott explained that after graduating from the prestigious Johnson & Wales Culinary Program, he went to work in restaurants and gradually found that he was developing carpel tunnel syndrome and tendonitis from the repetitive movements of chopping, dicing, and fileting. His condition became so bad that he started having to miss work.

After looking at different causes for his pain, he found out that it was actually the knives that he was using that were the cause of his pain and discomfort in his hands and he set about designing better knives that he could use as a professional chef, knives that would be ergonomically designed to reduce stress on the hand muscles. Within three weeks of using his newly designed knives, the pain in his hands disappeared.

After developing fifty prototypes and sending them to other professional chefs to try and give their input, he hit upon the perfect design for ERGO CHEF knives. The knives have a curved handle to better fit your hand, reduce stress on the hand muscles, and also have a nice heft to them. After much research, the ERGO CHEF brand was launched in 2002, and continues to be a trusted source for both professional chefs and home cooks.

During our visit, we discussed different methods of keeping your knives sharp. For best results Scott recommends honing the knives with a “steel” for the knives that you use regularly at least once per month depending on use to keep them sharp. When your knives need additional sharpening after an extended period of use, you can use a “wet stone” and take the time to finesse it with oil or water to smooth out the burrs that knives can develop over time and smooth them out. The next best method is to use a Diamond coated sharpening rod followed by a manual “pull-through” tungsten carbide, which is not as effective as using a wet stone or Diamond coated sharpening rod, but it is easier to use for novices. ERGO CHEF also offers professional knife sharpening service, for those able to drive to their facility and drop off their knives for sharpening.

Important knife care tips: You should always wash and dry your knives by hand; never wash them in a dishwasher as that can damage the knife blade. Scott also recommends using wood or plastic cutting boards, which are perfect to maintain your knife edges. Do not use glass cutting boards or cut directly on tile, marble, stone, or Formica, as they will dull knife edges (and certainly will not do your counters any favors either), and never scrape cuttings off a board with the blade edge facing down as this will dull the knife.
