Method for the Cocktail:  Mix all ingredients in a mixing glass. Pour into an ice-filled stemmed wine glass. Garnish with watermelon balls and fresh basil leaves.

Homemade Lemon Simple Syrup Ingredients

Method for the Simple Syrup: Add all ingredients to a medium saucepan and bring to a boil. Boil until liquid is clear. Set aside to let cool.

Method for the Cocktail: Add ingredients to a mixing glass. Stir to combine. Pour over an ice-filled rocks glass. Garnish with a sprig of fresh sage (or other herb) to play up the botanical notes of the Select Pilla Liqueur.

The Culinary Recipe

Luxury Experience – Corn and Green Chiles Pudding with Candied Jalapeños plays up the corn-based Steel 43 Vodka and the sweetness of fresh summer corn and jazzes it up canned green chilies and finishes it in style with garnishes of baby corn and candied jalapenos. The combination of sweetness with subtle spice makes this dessert ever so nice!

To create the Candied Jalapeños garnish, you will first need to make a jalapeno simple syrup first, then bake the jalapeños to dry them out. While extra work, they are worth it as they add a professional finish and an extra kick of flavor. Reserve the homemade jalapeño simple syrup to use in cocktails like the Bloody Mary to spice it up!

Homemade Jalapeño Simple Syrup Ingredients:

Jalapeños, (to taste), seeds removed, slice some lengthwise, and some widthwise

Important Note: The strength of jalapeños varies so cut a small piece from each of them to determine the level of heat and adjust amount used accordingly.

Method for the Jalapeño Simple Syrup: Add all ingredients to a small saucepan. Bring to a boil and boil until the sugar has dissolved. Remove pan from heat and allow to cool at room temperature. Strain syrup into a glass jar and refrigerate until ready to use. Will keep in the refrigerator for several weeks. You will now bake the jalapeños in an oven to dry them out.

Method for the Candied Jalapeños: Pre-heat oven to 200 degrees Fahrenheit/93 degrees Celsius. Place a piece of parchment on a baking sheet, add the jalapeños that were infused in the syrup. Bake until jalapeños are dry (and not sticky). Remove from the oven and cool them on a wire rack. Store in a covered glass jar until ready to use. (Will keep for at least a week.)

Method for the Corn Pudding: Cut the kernels off fresh corn (or frozen if fresh corn is not in season) and add to a blender with the canned green chiles and 8-ounces of the milk. Process until very smooth. Strain liquid into a bowl. Discard pulp. This will create the basis for a very smooth corn pudding.

In the bowl of a food processor, add the sugar, eggs, and salt, and blend well. Add the cornstarch and blend well to create a “slurry.”

Add the corn milk mixture to the slurry. Process to combine.

In a medium-large saucepan, scald 2 cups of milk (this is when bubbles appear at the side of the saucepan – not boiling).

With the food process running, slowly add 1 ladle of scalded milk to the corn milk mixture. This will prevent the eggs from curdling. Add another ladle of scalded milk, and process.

Combine the mixture in the food processor with the scalded milk in the saucepan and continue cooking for about 5 minutes until pudding is thickened and bubbling.

Remove from the heat, add 1-ounce Steel 43 Vodka and 2 tablespoons green chiles. Stir to combine. Return to the heat and cook for 1-minute.

Remove from heat. Transfer pudding to a bowl to cool slightly, then spoon into serving bowls. Refrigerate for at least an hour. (May be made 1-day ahead.) Garnish the pudding with baby ears of corn and candied jalapeños.
