Beginning with an inspired cocktail reception featuring Absente Absinthe cocktails at the bar, followed by a three-course cocktail pairing dinner In the Speakeasy, invited guests had the opportunity to not only experience this delectable potent potable, but also had the opportunity to meet with, and speak with Crillon Imports, Ltd. Absinthe The Ritual
Absinthe was the spirit of choice for artists Van Gogh, Degas, Lautrec, and the Irish author and playwright, Oscar Wilde, among others. With its high alcohol count (110-proof, 55% alcohol by volume), and Wormwood as part of its make-up, this very potent potable was banned in the United States in 1912. It is interesting to note that Absente Absinthe was the first legal Absinthe recipe to enter the US market after the ban was lifted.
Handcrafted in the South of France, Absente Absinthe Refined is made by using the highest quality artisanal distillation methods and ingredients including anise, star anise, balm, peppermint, and a full measure of the legendary and notorious botanical, wormwood, also known as artemisia absinthium. Mixed with water, heady aromatic notes of anise and black licorice that follow through on the palate, make it a versatile cocktail ingredient.

We first “discovered” Absinthe during a trip to New Orleans several years ago at the Old Absinthe House, where we were enchanted with their antique Absinthe fountain as we watched “The Ritual” with apt fascination, as ice water slowly dripped onto a sugar cube balanced on an intricately pierced spoon over a glass with Absinthe in the bottom. As the sugar water dripped into the Absinthe, it turned the liquid to a pale shade of green, “The Green Fairy.” For us, it was the ultimate cocktailian’s cocktail, a ritual that excited and engaged the senses with anticipation of the experience of sipping it and the pleasure it would bring.

For the Absente Absinthe Refined Dinner on November 5, 2025, at St. Mazie’s Bar & Supper Club, the evening began with an introduction and a demonstration of “The Ritual” followed by a selection of Absinthe cocktails that intrigued the palate, sensuously paired with oysters and antipasti while The Alex Simon Duo accompanied the cocktails with Jazz.

It was the perfect introduction for those new to the spirit and the Brand, and a lovely reacquaintance for those of us who know and love Absente Absinthe Refined. Crillon Imports, Ltd. CEO Jean-Baptiste Robert, of the Robert family in France, that owns the iconic Distilleries et Domaines de Provence, a century old French distillery located in Forcalquier Provence, France, along with his knowledgeable team, created a festive, educational, and very enjoyable evening learning about, and celebrating, Absente Absinthe.

Method for Cocktail: Add ice to a highball glass. Mix all ingredients and pour over ice. Garnish with a lemon twist.

Method for Cocktail: Brew the coffee and let it cool completely. Add ice to a cocktail shaker and then add the cooled coffee, simple syrup, Kahlua, and Absente Absinthe Refined. Shake very hard so a foam forms, then strain it quickly into a chilled Martini glass. Garnish with three coffee beans.
