When I think about chili, I think of cold weather comfort food, Sunday afternoon football, tailgate parties, après-ski, sledding, or skating, and if you need a little chili recipe inspiration, Seriously Good Chili Cookbook - 177 of the Best Recipes in the World by New York Times Best-Selling Author Brian Baumgartner is sure to inspire. For his cookbook, Brian Baumgartner, who many know from his role as "Kevin Malone" on the NBC Emmy-winning TV series, The Office, compiled his recipes along with contributions from award-winning chefs, celebrity chefs, and cooks from across the country. I was delighted when my recipe, Righteous Three-Bean Vegetarian Chili was included in his cookbook. Bon Appetit!

After reading Seriously Good Chili Cookbook - 177 of the Best Recipes in the World by Brian Baumgartner I learned that there are many ways to make chili, including Chili Con Carne (with meat), Chili Verde, White Chicken Chili, Texas Chili, Cincinnati Chili, Turkey Chili, Vegetarian Chili, Black Bean Chili, and many more. It seems the possibilities for chili recipes are as endless as the imagination and creativity of the chefs behind them. 

In addition to 177 great chili recipes in the cookbook, and the history of chili with fun facts, what I also found interesting was the inclusion of the Hot Pepper Heat Scale, outlining the 10 levels of heat ranges and the peppers that fall into each category. This is a great resource for learning about and distinguishing various types of peppers and their level of heat. Fans of The Office, will also be happy to know that "Kevin Malone's" famous chili from the episode where he dropped it on the carpet, is included in the cookbook.

Brian's Seriously Good Chili Recipe (pages 22-25)

Makes 6-8 Servings

Yellow Onion (or 1 cup shallots), chopped

Green Pepper, chopped

Garlic, diced

Lean Ground Turkey (or lean ground beef), undrained

Black Pepper

Can Bush's Pinto Beans in a Mild Chili Sauce, undrained

Shredded Cheddar Cheese, garnish

Directions: In a large pot, sauté the chopped onion, green bell pepper, and garlic in oil over medium-high heat. I like to use grapeseed oil because it's a little less oily. Add in the ground turkey or beef. Before the meat has completely cooked, add the tomato paste. Finish browning the meat completely.

Stir in the remaining ingredients, except the beans and the cheese. Bring to a boil. Reduce heat. Cover and simmer on low heat for 30 minutes (or longer until the desired consistency is reached), stirring occasionally. Then, 20 minutes before serving, add the beans. You can't add the beans in right away or they will get mushy. Finish with sharp cheddar cheese. Any leftovers are easy to freeze!

Ingredients:

Can Light Red Kidney Beans

Olive Oil

Garlic, minced

Cup
Onions, diced small

Cup
Carrots, diced small

Cup
Green Bell Pepper, diced small

Jalapeno, minced, to taste

Cup
Corn on the Cob, removed from cob
1
Cup
Zucchini, diced small

28-Ounce
Cans Diced Tomatoes, with juice

Cup
Ketchup
0.25
Cup
Maple Syrup (I use syrup from New York State)

Tablespoon
Siracha, to taste
 
 
Salt and Black Pepper, to taste

Bourbon (I use The Most Righteous New York Straight Bourbon)
 
 
Cheddar Cheese, grated, to taste

Directions: Drain, rinse, and soak the beans in cold water. While the beans soak, heat a large saucepot. Add the oil, garlic, onions, and carrots. Cover and sweat until the onions are translucent. Add the green bell peppers and jalapeño and sauté for 2 minutes. Add the corn and sauté for 3 minutes. Add the zucchini and sauté for 2 minutes. Add the diced tomatoes. Drain the beans. Add the beans to the tomatoes and vegetables. Then add the ketchup, maple syrup, sriracha, and salt and pepper to taste. Stir to combine. Bring to a boil. Reduce the heat and simmer for 1 hour. Finish with the bourbon and grated cheddar.
