On Saturday, October 16, 2021, we experienced the Food Network & Cooking Channel New York City Wine & Food Festival’s Farmer’s Market Brunch hosted by Chef Geoffrey Zakarian at The Standard High Line Biergarten. It was a delicious morning of grazing at the various restaurants’ tables, and sipping coffee, cocktails, hard seltzer, and wine. It was the perfect autumn celebration with farm-to-table offerings from different farms creatively served by the chefs. The Brunch also provided guests with the opportunity to speak with the chefs and learn more about the products.
The Chefs and Food Tastings
Debra C. Argen and Chef Alfred Portale
Chef Alfred Portale of his eponymous restaurant PORTALE (126 West 18th Street, New York), tempted guests’ palates with "Lumache," which was braised duck, preserved heirloom tomato, and wild arugula pesto.
Satay Ayam – WAU Restaurant
Chef Salil Mehta of WAU Restaurant (434 Amsterdam Avenue, New York City) presented "Satay Ayam," skewer-marinated grilled chicken with homemade peanut sauce.Chef Charlie Foster of Woods Hill Pier 4 (300 Pier 4 Boulevard, Boston, Massachusetts) offered "Buttermilk Cheddar Biscuit," with Shaved Woods Hill Farm guanciale, and pepper jam.
Chef Jean-Paul Lourdes of The Standard Grill
Chef Jean-Paul Lourdes of The Standard Grill (848 Washington Street, New York City) presented Slow-Roasted Carrots with cultured cream and burnt citrus. Although delectably delicious, this was a "not to be attempted at home" as chef explained that the carrots were cooked on their 1,000-degree Fahrenheit grill. The carrots had a rich caramelization from the high heat that paired well with the cultured cream and burnt citrus.
Chef Kelsey Barnard Clark of KBC
Chef Kelsey Barnard Clark of KBC (151 N. Foster Street, Dothan, Alabama) presented a Buttermilk Soup and Cornbread with stone fruit.
Chef Andrew Sutin of The Mary Lane
Chef Andrew Sutin of The Mary Lane (99 Bank Street, New York City) presented Confit and Charred Norwich Meadow Farms Squash with apple and kohlrabi relish.
Rochelle Render of Eckerton Hill Farm
Chef Brant Shapiro of Norwich Meadows Farm (105 Old Stone Road, Norwich, New York) brought squash and Chef Tim Stark of Eckerton Hill Farm (Berks County, Pennsylvania) brought a mélange of colorful heirloom tomatoes and peppers, which patrons could take home.
Edward F. Nesta and Chef Alexander Staley of Plant Nation
Beet Salad
Chef Alexander Staley of Plant Nation at Citizens New York (398 10th Avenue, New York City) presented a beet salad with beet chips, fresh beets, goat cheese, toasted seeds, on mixed greens, which had lovely layers of flavors and textures.
Chef Dale Talde of Goosefeather
The most innovative technique of the day went to Chef Dale Talde of the restaurant Goosefeather (49 E. Sunnyside Lane, Tarrytown, New York), who used a steam iron and a griddle to create Grilled Cheese with Roasted Squash and Apple sandwiches. Using a steam iron on top of the bread is definitely another technique "not to be tried at home" at least not with a good iron.
Coffee Libations
Illy Caffè
Illy Caffè served up espresso, lattes, cold brews, and more, throughout the brunch.
Jägermeister – "Adult Cold Brew Coffee"
Jägermeister offered "coffee with a kick" with their "Adult Cold Brew Coffee" shaken with cold brew coffee, topped with a decadent amount of whipped cream, and drizzled with caramel.
White Claw
White Claw kept patrons hydrated by offering two versions of their hard seltzer, Black Cherry, and Watermelon.
Oak Ridge Winery
Oak Ridge Winery offered a selection of lovely wines including their OZV Zinfandel (Retail $15), Old Soul Pinot Noir ($16), and Maggio Chardonnay ($12), estate grown in Lodi, California.
Four Roses Bourbon Cocktails
Guests looking for more potent libations had a lovely selection from Four Roses Bourbon, with their cocktail "The Huddle Up" made with Four Roses Bourbon, Apple Cider, and Bitters, or neat pours of Four Roses Small Batch Bourbon (retails around $40), Four Roses Single Barrel Bourbon ($50), or Four Roses Small Batch Select Bourbon ($60).
