Looking for a crisp, dry, white wine with lots of character? Joseph Mellot Pouilly-Fumé Le Troncsec 2023 from the Loire Valley in France is a gold-medal recipient from Concours des Ligers and may become your new favorite wine. Made from 100% Sauvignon Blanc grapes grown in the limestone rich terroir, this wine offers a heady, aromatic nose of citrus, white peaches, with nice minerality. It is delicious to enjoy on its own, as well as paired with food. We paired it with our recipe for Luxury Experience – Porcini Mushroom Truffle Ravioli in a Truffle Cream Sauce, as well as enjoyed it with creamy, Triple Cream cheese from Burgundy, which complemented the stunning essence of the wine. It is interesting to note that the Joseph Mellot estate was founded in 1513 by Pierre-Etienne Mellot, and at the end of the 17th century, César Mellot was King Louis XIV’s Wine Advisor. They have a long history of wine excellence and have continued to be a leader in wines. In 2009, Joseph Mellot became the first winery to become ISO 14001 certified in their region; in 2010 they received Sustainable Agriculture Certification; in 2103 Catherine Corbeau-Mellot was appointed ‘Knight of the National Order of Merit’ by the Ministry of Foreign Trade; and in 2015 their ‘Domaine des Emois Estate received its ‘Organic Farming’ Certification, to name a few of their advances and achievements. It is a wine house that deserves to be noticed based on their legacy and excellence in each bottle.

Tasting Notes: The color is pale yellow tinged with light green notes. This is a gorgeous wine with a heady aromatic nose with lemon, white peaches, and limestone notes, combined with a long, delectable, crisp, lingering finish. It is a wine that can be enjoyed on its own or paired with a variety of food.

Pairing Suggestions: “Lemon chicken tagine or a blanquette of veal. Of course, it also suits local cheeses like Crottins de Chavignol.”

With its lemony and crisp notes, we opted to pair the Joseph Mellot Pouilly-Fumé Le Troncsec 2023 with Luxury Experience – Porcini Mushroom Truffle Ravioli in a Truffle Cream Sauce, which was the perfect complement and accented the richness of the wine.

Salt and Pepper, to taste

Method: Fill a large pot with water, add salt, and bring it to a boil. Add ravioli and boil until they float to the surface.

Heat a large skillet, add salt and pepper to the pan, let spices heat, then add 1-tablespoons truffle oil, add garlic, and sauté until garlic is toasty brown. Add 2-ounces truffle oil to the pan and the add the mushrooms. When mushrooms are starting to turn golden brown, add 1-ounce of the wine and I-ounce of the pasta water to finish cooking the mushrooms. Add the Greek yogurt to the pan and stir to combine with the mushrooms. Add 2-ounces of the wine and stir to create a smooth sauce.

Plating: Divide the ravioli into two dishes, top with truffle mushroom cream sauce. Garnish with a sprig of fresh rosemary (optional).
