We had the pleasure of meeting Executive Chef Tony Moustakas and experiencing his fabulous food during the special Italian Feast, a curated 5-course Chef Dinner held at City Winery Hudson Valley in Montgomery, New York on Saturday, January 18, 2025. After dinner we met with him to learn more about this very interesting and passionate chef. Chef Tony Moustakas graciously shares his delectable recipe for Mushroom Bruschetta to tempt your palates into making a trip to City Winery Hudson Valley and experiencing their excellent food and award-winning wines for yourself. Born and raised in the Hudson Valley of New York, Executive Chef Tony Moustakas is the talent in the kitchen at City Winery Hudson Valley. He is a third-generation chef who first honed his culinary skills working in the kitchen alongside his father, before continuing his culinary training at Johnson & Wales University in the Culinary Arts/Chef Training program. Prior to working at City Winery Hudson Valley, Chef Moustakas ran his own restaurants for several years. Passionate about his family and cooking, he, and his family call Hudson Valley home.

Executive Chef Tony Moustakas graciously shares his recipe for Mushroom Bruschetta to tempt your palate into experiencing the restaurant at City Winery Hudson Valley for yourself. Bon Appetit!

Executive Chef Tony Moustakas, City Winery Hudson Valley Recipe – Mushroom Bruschetta

Mushroom Bruschetta 

Ingredients:

Grams (3.5 Ounces)
Shitake, stemmed and sliced

Grams (3.5 Ounces)
Oyster mushrooms, rough chopped
100
Grams (3.5 Ounces)
Cremini, sliced

Grams (2 Tablespoons)
Truffle Oil
Olive Oil
1
Gram (1.25 Teaspoon)
Thyme, fresh, stemmed
Boursin cheese (garlic & herb)
1
Gram (1.25 Teaspoon)
Chives, finely cut
Salt and Pepper
Ciabatta bread, cut in the bias

Method for the Mushroom Bruschetta: Pre-heat convection oven to 350 degrees Fahrenheit (176.6 Celsius).

Place the mushrooms and salt and pepper on an oiled sheet pan, season with salt and pepper and bake for 5 minutes. (Chef Tony Moustakas notes that you can use any combination of mushrooms you like.)

After the mushrooms are cooked, transfer them to a bowl and add truffle oil, chives, thyme, and check for seasoning. Set to cool.

Cut the ciabatta (or other crusty bread of your preference) one-half inch thick on the bias, and brush with olive oil and grill to toast.

Presentation: Spread Boursin cheese on the bread and top with cooked mushrooms. Garnish with chives. Chef Tony notes that you can serve this mushroom bruschetta accompaniment with burrata cheese as well.

February 28, 2025: Wild Game: An evening of a curated 5-course wine and food experience featuring the rich flavors of wild game. Look for red wines and a mélange of wild boar, venison loin, and duck at this dinner.
