Located steps off South Main Street on Depot Street, the restaurant is in the heart of Concord. Cool contemporary design, creative cocktails and inspired cuisine make it a restaurant that has been garnering praise and awards since it opened. Chef Corey Fletcher graciously shares his recipe for Goat Cheese Cake with Cheddar Walnut Crisps to tempt your palate into dining at Revival Kitchen & Bar.

We met with Chef Owner Corey Fletcher at his restaurant, Revival Kitchen & Bar on August 31, 2019, after experiencing a wonderful dinner at the restaurant. Chef Corey graciously took time out of the kitchen to speak with Luxury Experience.

A Milford, New Hampshire native, when asked about how he decided on a culinary career, Chef Corey jokingly said that he was "sucked up into the culinary vacuum." He started working in a restaurant washing dishes, and from there was inspired togo to culinary school. Dedicated and passionate, he moved to Concord, New Hampshire to open a restaurant 15 years ago and stayed in the area.

He was inspired by chefs Thomas Keller and Daniel Barber who were doing farm-to-table cuisine back in the late 90s and early 2000s and liked that concept. When he opened his own restaurant, Revival Kitchen & Bar his culinary focus was to develop relationships with local farmers and purveyors and use local ingredients with his eye on farm-to-table cuisine.

His menu features duck from Loudon, New Hampshire, and there are some fabulous local cheeses and products from farms in the area. Duck has always been a specialty of Chef Corey’s who is an avid outdoorsman who grew up hunting and cooking duck. He changes the restaurant’s menu seasonally, so there is always something new happening. September is his favorite culinary month as there are still end of summer ingredients available and the start of the fall ingredients and loves to use wild mushrooms. His favorite culinary tool? His knife.

The best advice he ever received from a chef was that people eat with their eyes first but remember it must taste good. His advice to those wishing to pursue a culinary career is to start off at the bottom and learn technique before trying to recreate the wheel.

When not working in the kitchen or dreaming up new recipes for Revival Kitchen & Bar, Chef Corey likes to spend time with his wife and young daughter, as well as being outdoors mainly hunting, doing some fishing and for aging.

Chef Corey Fletcher – Revival Kitchen & Bar – Goat Cheese Cake with Cheddar Walnut Crisps

Goat Cheese Cake Ingredients

Goat Cheese

Ounces

Cream Cheese

Ounce

Flour

Shallots, Minced

Herb Mixture

Teaspoon

Pepper

Eggs

Ounces

Heavy Cream

Preheat oven to 300 degrees Fahrenheit (149 degrees Celsius).

Method: Prepare the terrine mold by spraying with pan coating and placing a piece of parchment paper that fits into the bottom of the mold perfectly.

Cream the goat cheese, cream cheese and flour until smooth. Scape down the sides of the bowl occasionally. Add the shallots, herbs, salt and pepper. Add eggs one at a time, allowing to mix in before adding the next one. Scrape down the bowl.

Mix in heavy cream and make sure there are no lumps. Pour into the prepared terrine mold.

Bake in ahot water bath in the oven until completely set, about 1-hour.

Cheddar Walnut Crisps Ingredients

Butter, room temperature

Cheddar Cheese, grated

Walnuts, finely chopped

Must be made ahead and chilled before baking.

Method: Cream butter, add cheese, and mix well. Add flour and salt, mix well. Add walnuts, mix well.

Form dough into a log about 2-inches wide, chill well.

Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius)

Slice the log into one-fourth of an inch thick and bake slices on parchment paper until crisp about 8-10 minutes.

Chef Corey notes, "I change the "set" seasonally. For fall I would serve it with a butternut squash and apple salad and a cranberry honey puree. Local artisan goat cheese really shines in this recipe. The crisps are a great addition to a cheese and charcuterie display as well."

Revival Kitchen & Bar is open Tuesday through Thursday from 4:00 pm until 9:00 pm, Friday and Saturday from 4:00 pm until 10:00 pm. The restaurant is closed on Sunday and Monday.
