Chef Clayton Slieff
Chef de Cuisine Clayton Slieff has an impressive culinary resume and honed his craft at the Chef’s Institute of America in Rhode Island, followed by advanced culinary training at The Culinary Institute of America (Greystone) in California, where he often appears as a Guest Chef/Instructor. After stints at various top Reno restaurants, he has called the Atlantis Casino Resort Spa home since 2007.
We had the pleasure of meeting Chef de Cuisine Clayton Slieff during our stay at the hotel and attending Bistro Napa’s El Fogonero Tequila Dinner on Thursday, July 25, 2019. The dinner was part of their Spirited Dining Series where Chef Clayton Slieff created a delectable 5-course dinner paired with creative El Fogonero tequila cocktails created by Master Mixologist Steven Sedillos. It was a memorable evening of cuisine, cocktails, and conversation.
The attractive fine dining restaurant’s culinary focus is inspired by Napa Valley, California cuisine, with organic items on the menu, a 4,000-bottle wine cellar managed by their "Somm" Sommelier Christian O’Kuinghttans, and a creative cocktail menu designed by Master Mixologist Steven Sedillos.
Bistro Napa – Atlantis Casino Resort Spa
Chef Clayton’s inspiration for becoming a chef was his father, who was a chef in the United States Marines. He followed in his father’s footsteps, as a civilian chef, and went to Afghanistan for one year where he fed an averageof 4,000 GIs daily.
His favorite item on the Bistro Napa’s menu is their signature dish, the Pan Roasted Chilean Sea Bass with sautéed prawns, crab mashed potatoes, wood-fired asparagus, saffron beurre blanc, and brussels sprouts slaw. His favorite culinary ingredient is lemon thyme.
Chef Clayton’s advice to those looking to pursue a culinary career is to continue further education. Passion and love for what you do will help carry you a long way, however further education will help your career. Although chefs work long days and do not have much free time, when Chef Clayton has time he likes to go out to eat for enjoyment as well as to keep in touch with trends, and research what other restaurants are doing, as cooking is not a job for him, it is an ability. He feels that his ability to cook is a blessing. He is clearly passionate about what he does. He also likes to spend time with his family and recently took his granddaughter to California to see all the Disney sights and to Sea World, too.

Chef de Cuisine Clayton Slieff – Bistro Napa – Seafood Ravioli
Seafood Ravioli
Filling Ingredients:

Method: Place filling ingredients in a food processor and blend until smooth, adding heavy cream to thin if necessary. Refrigerate until ready to use.
Pasta Ingredients

Water as needed, if dough is too dry |
Method: Mix egg yolks and durum wheat flour together to make a dough. Add water as needed if the dough is too dry. [Editor’s Note: the amount of water may vary each time you make the pasta dough due to the level of humidity on the day you make the pasta.]
Roll dough out into a rectangle. Cut pasta dough into squares (or use a ravioli form). Place a small amount of filling in the center of the square. Moisten edges of pasta with water, top with another pasta square, and press down around the mound of filling going outwards to the edges to seal the ravioli. If desired, you can roll the edges with a pasta tool or use the tines of a fork to create a decorative edge and help seal the pasta.
Bring a pot of salted water to a boil, add the ravioli and cook until they rise to the top of the water or to your own preference of doneness.
Bistro Napa is located on the second floor of Atlantis Casino Resort Spa and is open for Dinner Sunday through Thursday from 5:00 pm until 9:00 pm, and Friday and Saturday from 5:00 pm until 10:00 pm.
