Chef Robert Saulnier Restaurant Le Graffiti, Quebec, CanadaExecutive Chef Robert Saulnier of Restaurant Le Graffiti in Québec, Canada provides a delicious taste of the restaurant with his recipe for Shrimp and Scallops Fricassée perfumed with Star Anise.

 


Executive Chef Robert Saulnier is a dedicated and passionate chef who began working in restaurants at the age of 14 in Lyon, France. He learned his profession working as an apprentice to more experienced and recognized chefs, and honed his craft throughout the years by continuing to refine his art and create his own culinary signature.

He moved to Québec 40 years, and joined Restaurant Le Graffiti 25 years ago where the restaurant’s owners as well as the culinary focus is Italian, with housemade pasta their specialty, along with fresh seafood and meat.

I had the opportunity to meet Executive Chef Robert Saulnier after having dinner at Restaurant Le Graffiti in May 2009, where I was charmed by his personality, and won over by the high quality and presentation of his cuisine.

Executive Chef Robert Saulnier graciously provides his recipe for Shrimp and Scallop Fricassée perfumed with Star Anise that is sure to tempt your palate.

Shrimp and Scallop Fricassée perfumed with Star Anise
For 4 Persons

Ingredients:

Shrimp

Scallops

Leeks

¼

Cup (59 ml)

White Wine

½

Cup (118 ml)

Cream, 35%

Tablespoons

Olive Oil

Star Anise

Salt and Pepper

Butter

Method: Wash and slice the leeks, drain, and then brown with olive oil. Arrange on four plates and keep warm.

Sauté the shrimp and scallops in butter and set aside. Deglaze the pan with white wine. Add the star anise, and then slowly add the cream. Season to taste with salt and pepper. Add the shrimp and scallops to the four plates, and coat with the sauce. Et voílà! Bon Appetit!
