Tasting Notes: Torres Brandy was founded in 1928, and the Torres Brandy Jaime I, Reserva De La Familia is a celebration of excellence and a tribute to its Founder, Don Jaime Torres. Our tasting experience began with its luxurious presentation. Enclosed in an artistic black metal sculpture with attractive wood base and top engraved with Jaime I Brandy Reserva De La Familia, the elegant and heavy crystal swirl decanter bottle with ornate stopper denotes its legacy heritage and beckoned to us like moths to a flame. It was stunning and irresistible before we even poured a small amount into two snifter glasses. The color was a rich, deep mahogany that denotes its aging in American oak barrels. The nose was heady and aromatic with vanilla, walnuts, floral, and fruit notes, followed by a smooth velvety mouthfeel that compelled us to take another sip, and this time letting it linger to extract a memorable and lingering finish. With each sip, its rich flavor profile unfolded and enchanted, exactly what a well-crafted spirit should accomplish.

Luxury Experience Pairing Menu 

We wanted to play up the sumptuous and elegant notes of Torres Brandy Jaime I Reserva De La Familia and show its versatility whether paired with savory or sweet food. For our savory pairing, we paired Spanish charcuterie with its slightly salty notes to pair with the sweeter notes of the brandy. Aged cheeses also pair well with Torres Brandy Jaime I Reserva De La Familia and the Spanish Manchego cheese aged for 12 months was a perfect complement, along with dates to provide a complementary sweet note.

Jaime I food pairing – Prune and Goat Cheese Cheescake

For our sweet dessert pairing, we created our recipe for Luxury Experience – Prune and Goat Cheesecake, which celebrates the layered nuances of this luxurious, elegant, and sophisticated spirit. The crust is made with toasted almonds to pick up the nutty notes of the brandy. Instead of cream cheese, we used Chevre (goat cheese) for the cheesecake for a luscious and different approach, and infused prunes with a little brandy in the cheesecake to give it a subtle kiss of flavor and used the remaining prunes as a topping for the cheesecake. Garnished with mandarin oranges and fresh mint, it was a decadent and delicious pairing for the Torres Brandy Jaime I Reserva De La Familia.

Luxury Experience Recipe

Luxury Experience – Prune and Goat Cheesecake
Pans Needed: Removable Bottom Tart Pans
Yield: 8 small cheesecakes (2.5-inch/6.35 cm) removable bottom tart pan
2 larger cheesecakes (4.5-inch/11.43 cm) removable bottom tart pan
Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius) 

Crust Ingredients:

Toasted Almonds, pulverized

Bauducco Maria Biscuits, finely ground

Salted Butter

Dashes

Method: Add all ingredients to a food processor, and process until combined and dough holds together. Lightly spray your removable bottom tart pans with vegetable oil (for ease in removing cheesecakes). Press crust into the bottom and sides of the tart pans. Refrigerate while you make the filling.

Infused Prune Liquid Ingredients:

Method: Add pitted prunes to a small jar or bowl, add brandy, and let it rest. This can be done ahead of time.

Cheesecake Filling Ingredients:

Method: Add all ingredients to a food processor and process until mixture is very creamy and smooth. Let the mixture rest for a few minutes to settle.

Remove crusts from the refrigerator. Spoon the filling into the crusts and bake until a tester inserted in the center of the cheesecakes comes out cleanly. Time will depend on the size of your tart pans.

Topping Ingredients:

Once you have added 1 tablespoon of the infused prune and brandy liquid into the cheesecake filling, puree the pitted prunes and remaining brandy liquid with 3 teaspoons of orange juice. The smooth prune puree will be the topping for the cheesecake once it is baked.

Garnish Ingredients:

Mandarin Orange Segments
Fresh Mint

Presentation: Carefully spread the prune puree over the top of the cheesecake. Garnish with mandarin orange segments and sprigs of fresh mint.

“In the 14th century, Arnau de Vilanova, a Catalan doctor, developed the first “Aqua Vitae”, a wine distillate for medicinal purposes. The word “Brandy” is of Dutch origin and means “burned wine”. 16th-century Dutch merchants distilled the wine in stills and stored it in oak barrels for transport.
