For this cocktail, we paired Litchfield Distillery Batchers: Port Cask Finish Bourbon Whiskey, with Goya Tamarind Nectar, Litchfield Distillery Batchers: Bourbon Barrel Maple Syrup, and lime juice, and garnished it with fresh mint.

Peaches and bourbon are a delectable pair, and our dessert, Luxury Experience – Peach and Bourbon Cream in Phyllo Pastry “Nest” plays up the nuanced flavors of Litchfield Distillery Batchers: Port Cask Finish Bourbon Whiskey with peaches and bourbon pastry cream layered in a crispy phyllo “nest” that adds texture to this easy to make, easy to love dessert. If you are “baking shy” you can also layer the Peaches and Bourbon Pastry Cream with diced peaches in a wine or martini glass to create a pretty parfait.

Method for the Peaches and Bourbon Pastry Cream: Drain peaches and puree and set aside.
Using a food processor, add the egg yolks, sugar, and salt, and process until smooth. Add the cornstarch and process to create a “slurry.”
Heat the milk and half and half (or light cream) in a heavy bottomed saucepan over medium heat until bubbles start forming at the edges of the saucepan but ii is not boiling. With the food processor running, slowly add 1 small ladle of hot milk to the egg “slurry.” This step is to temper the eggs so they will not curdle from the hot liquid. Continue to slowly add ladle by ladle, until all of the hot milk is in the food processor. Process to incorporate all ingredients.
Return the mixture to the saucepan and cook over medium heat, stirring continuously until the mixture starts to thicken. Remove the saucepan from the heat, add the 2-ounces of Litchfield Distillery Batchers: Port Cask Finish Bourbon Whiskey and the Fee Brothers Peach Bitters, and cook for another 1-2 minutes until the mixture has thickened.
Remove from heat, pour into a bowl, let cool slightly, then lightly press plastic wrap onto the pastry cream to prevent a skim forming on top. When cool, refrigerate for several hours or overnight.
Phyllo “Nest” Ingredients:

Method for the Phyllo “Nests”: Preheat oven to 350 degrees Fahrenheit/176.6 degrees Celsius.
Our Phyllo Nests are made with purchased Athens Filo Dough Sheets. We used a muffin tin as a mold for the “nests” and cut phyllo dough sheets into 5-inch squares. You will you need 5-squares per “nest.”
Brush the muffin cups with melted butter. Brush 1 the top side of a square of phyllo dough with butter, place in the muffin cup. Repeat until you have 5 layers. Lightly sprinkle sugar over the “nest.” Repeat to create a total of 6-8 “nests.”
Bake “nests” for approximately 10 minutes, or until lightly golden. Remove from oven, let cool slightly then remove the nests to a cooling rack.
Presentation Suggestion: Spoon or pipe peaches and bourbon pastry cream in the “nests,” top with some minced peaches, and garnish with fresh mint.
