Bottle Notes: “Classic Albariño from hand-picked grapes, sustainably grown within sight of the Atlantic Ocean. Bottled after resting at least three months on its fine lees, preserving maximum freshness.”
Technical Notes: “100% Albariño sourced from several micro-plots, located in the villages of Cambados, Vilanova de Arousa and Meaño. The soil consists of decomposed granite with a northwest-north orientation. 100% manual harvest in 17kg crates, with long skin-contact of 8 hours, followed by fermentation with indigenous yeasts in stainless steel tanks. Aged for 4 months on its fine lees.”
Tasting Notes: The color is a pale yellow tinged with green with bright green apple notes on the nose and a rich complexity on the palate with green apple, ripe white peaches, honeydew on the long and delicious crisp finish.

Method: Add diced fennel, crab meat, and diced Granny Smith Apple to a mixing bowl. Add mayonnaise, minced dill, and season to taste with salt and pepper. Chill to let flavors meld.
Plating: Line a platter with lettuce, mold crabmeat salad in the center, and surround with honeydew slices and sliced lemon. Garnish with additional dill if desired.
Pro-Tip: Line a domed bowl with plastic wrap, add crabmeat, cover with plastic wrap, and lightly press down to mold the crabmeat. Turn the bowl upside down on lettuce and remove plastic wrap.
