While San Felice is a historic winery in Chianti Classico, it continues its growth and evolution with In Avane Chardonnay Toscana IGT, part of the Vitiarium collection, “a range of wines designed for high-end dining that authentically expresses the surrounding vineyards and embodies both tradition and innovation in winemaking. In addition to In Avane Chardonnay Toscana IGT, the other three labels that comprise the collection include Borgo Chianti Classico DOCG 2022, La Pieve Chianti Classico DOCG Gran Selezione 2021, and Pugnitello Toscana IGT 2021.” Each of the wines tells a different story as unique as the labels on the bottles.

Preheat oven to 400 degrees Fahrenheit/204 degrees Celsius.
Method: Place tilapia filets in a food processor and pulse to shred the filets. Remove from the food processor and place in a mixing bowl. Add the rest of the ingredients and mix well.
Pro Tip: To create professional looking fish cakes, use a 2.5-inch round biscuit cutter to mold the fish cakes. Place parchment paper on a baking tray, lightly spray the top of the fish cake with olive oil and place it upside down on the parchment paper. Spray the tops of the fish cakes and bake for about 20 minutes or until the cakes are golden, have a crisp crust, and the fish is cooked through.

Method: Line a baking sheet with parchment paper. Thinly slice potato on a mandolin or in a food processor, or with a knife. Place slices on the baking sheet and lightly spray with olive oil spray and a light sprinkle of sea salt. Bake until light golden, then turn slices over and bake until golden. Do not burn the chips.

Method: Mix all ingredients in a bowl until combined. Use immediately or refrigerate until ready to use.
Plating: Place one fish cake in the middle of the plate (for appetizer portion, or 2 for a main course). Top with a generous amount of sauce. Add chips to the side of the plate, and garnish with fresh dill wrapped with a lemon peel (if desired).
