The 2022 Mohegan Sun, Sun Wine & Food Festival was a multi-day festival with exciting events which included the Whiskeys of the World presented by Beam Suntory, Inc., Grand Tasting Preview, A Night with Toms’ Good Lovin’, Grand Tasting with Chef Demos, Tao Sushi & Sake Pairing, Vintage Cru, Celebrity Chef Dine Around, and culminated with the Game Day Brunch with Buddy Valastro, with Special Guest Victor Cruz on Sunday, January 30, 2022. To say that this was a sensational experience for food, wine, spirits, and sports fans would be an understatement, as this was a world-class event.

During the Brunch, Buddy Valastro "The Cake Boss" demoed how to make Tres Leche French Toast, which was a delectable twist on traditional French Toast. Buddy told the audience that when he was growing up his mother would make traditional French Toast with eggs and milk and add orange zest and Amaretto Di Soronno liqueur. Being Italian, he said that he did not grow up using sweetened condensed milk, however as he traveled and experienced Latin cuisine, he became interested in using sweetened condensed milk in his creations.

Tres Leche Sauce Ingredients:
Sweetened Condensed Milk
Evaporated Milk
Whole Milk

Method for the Sauce: Stir the three milks together, (the consistency should be like a glazed sugar icing consistency), then pour into a squeeze bottle and let set.
Buddy Notes: It is up to you, the more sweetened condensed milk you add, the sweeter it will be. It is almost like a thickening agent, so that is why with the Traditional French Toast you do the dip, then cook and flip, however, the brioche and the sweetened condensed milk gives it a different consistency, so you need to give the brioche a little more time to soak in the milk and egg mixture, then flip the slices a couple of times until it is done.

Tre Leche French Toast
Method for the French Toast: Mix the milks with eggs. Heat a skillet and add butter to melt. Place the brioche slices a large bowl or pan, and pour the milk and egg mixture over them, letting the brioche soak up some of the milk (but do not let the bread get soggy). If you lightly press down on the brioche, a small amount of milk should run from it. Let the brioche slices cook in the butter and flip over a few times to ensure even doneness and a rich, golden color.
Presentation: Drizzle the Tres Leche Sauce onto a plate, add the Brioche Tres Leche French Toast, garnish with fresh strawberries, blackberries, and blueberries, dust with confectionary sugar, and finish with sliced nuts.

After Buddy’s demo, special guest Victor Cruz spoke about his game day predictions, his Giants football experience including what it was like to win a Super Bowl with the Giants, and even demonstrated his famed Salsa end zone moves with a lucky audience member.
The Game Day Brunch was held at the attractive Novelle (gaming, lounge, small plates, private events), where a sumptuous buffet awaited. A few of the very tasty and diverse selections included miniature Danish pastries and croissants, fruit salad, fluffy scrambled eggs, Buddy’s Tres Leche French Toast, breakfast potatoes, bacon, antipasti, charcuterie and a variety of cheeses, chicken marsala, pasta primavera, a tempting assortment of desserts, and much more.
A special Brunch needs special libations, which were readily available from Truly Hard Seltzer, Athletic Brewing Co. the brewers of non-alcoholic beer, and Aperol Liqueur, which made its debut in 1919. To add a bit of fun and whimsy, Aperol brought their bright orange trolley to create their famous Aperol Spritz. They also graciously provided the recipe so that guests could make this refreshing and tasty cocktail at home. The added benefit of the Aperol Spritz is that Aperol Liqueur has only 11% alcohol, and prosecco ranges around 12% alcohol.

Orange Slice, garnish
Method: Fill a balloon glass with ice. Pour prosecco over ice, add an equal part of Aperol, add a splash of club soda and garnish with an orange slice for a touch of sweetness and to add an added pop of color. Cheers!
