Continuum Distilling Charred created by Continuum Distilling, founded in 2019 and based out of Waterbury, Connecticut, is a delectable dark spirit made from local Connecticut Craft brown ales, stouts, and porters. Continuum Distilling is the brainchild of Head Distiller Brandon Collins, Jim Baranowski, brothers Tom and Jason Sobocinski, and Master Brewer Tyler Jones of Black Hog Brewing, who have partnered to create a unique and very tasty flagship spirit which they refer to a "beer whiskey." Crafted in small batches, the Batch Number is handwritten on each on bottle.

Product Information: Continuum Distilling Charred, is their "flagship "beer whiskey" made from brown ales, stouts, and porters. Aged on local wood staves for a round rich toasted flavor," Charred is a unique bold spirit, has a rich-amber color, 48% alcohol by volume (96 proof), and each bottle proudly bears its handwritten batch number on the front of the bottle. Charred retails for $35 for a 375 ml bottle and $55 for a 750 ml bottle.

Tasting Notes: Our bottle of Continuum Distilling Charred proudly bears the handwritten batch number, 001. It has a beautiful amber color like liquid burnished gold. On the nose there is a hint of sweetness, with toffee, caramel, and toasted nuts. On the palate, there is hint of sweetness, and vibrant, lively, and bold flavors of stout, caramel, and toasted almonds that meld for a memorable long finish. Continuum Distilling Charred is perfect to sip neat or add a little water to release its rich essence, or to create handcrafted fabulous cocktails.

Homemade Lemon Simple Syrup

Lemon Slice, garnish

Method for the Homemade Lemon Simple Syrup: Remove peel from 1 lemon. Add to a saucepan with 1 cup water, 1 cup sugar and bring to a boil until liquid is clear. Remove from heat and let sit until syrup is cool. Remove the peels from the syrup and strain syrup into a glass jar and refrigerate syrup until ready to use. (Note: Syrup lasts several weeks and can be used to sweeten cocktails and other beverages, brush on fruit and grill, or add to your favorite marinade.)

What to do with the Peels: Place lemon peels from the syrup on a baking sheet lined with parchment and bake in a 200-degree Fahrenheit oven until thoroughly dried. Let cool on baking rack. Place dried lemon peels and some sugar in a blender and blend to create homemade lemon sugar, perfect for rimming cocktails or added to tea.

Method for the Cocktail: Add ice to a highball glass. Set aside. In a mixing glass, add the Continuum Distilling Charred, Plain-T Detox Lemon, Mint, Ginger Tea, and lemon simple syrup. Stir and pour into highball glass. Garnish with a lemon slice. (Adjust syrup to taste if desired.)

Method for the Portabella "Burger": Blend Continuum Distilling Charred with the softened butter. Brush the cap side of the mushroom with the olive oil. Spread the butter mixture on the underside of the mushroom. Sprinkle with salt and pepper. Heat a grill pan, add the portabella mushrooms cap side down, cook for 1 minute, then turn cap over to cook the underside. The mushroom "burger" will be nice and juicy.

Presentation: Toast a roll, top with portabella mushroom "burger" and finish with Luxury Experience – Spirited Tomato Relish. Add lettuce and tomato to plate if desired.

Method for the Tomato Relish: Heat a saucepan, add the olive oil, then tomatoes and garlic cloves and cook over medium heat until tomatoes are blistered. Add the rest of the ingredients and cook for 1-minute. Place ingredients in a food processor and process until mixture is coarsely chopped to create the relish. Place in a glass jar in the refrigerator and store until ready to use.

Note: The relish can be made 1-day ahead to allow flavors to meld. The relish also makes a great topping for bruschetta.

Background Information on Continuum Distilling

"Usually distiller’s beer is comprised of only the most basic grains with the purpose of extracting the most sugar possible to obtain an optimal efficient conversion into alcohol. We discovered that there are multiple steps in the brewing process where ingredients, such as sugars, fermented out beer with yeast in suspension, and flavorful solids can all be recouped and repurposed for distilling. It would be extremely expensive to attempt to recreate these flavors as beers and distill them for a spirit, but when these delicious compounds can be utilized using disposed waste or "trimmings" from the brew process…that is when sustainability and innovation marry to make something exceptional! Continuum strives to be resourceful in our process by minimizing our usage of raw materials, repurposing items/equipment for the distilling and aging process and limiting our water consumption to produce truly unique and exceptional spirits with as little footprint as possible."
