Chef Christian Petroni
Food Network fans know the talented Chef Christian Petroni from his appearances as a Judge on the television shows, Chopped and Beat Bobby Flay. He also competed as a chef and won on Food Network shows and cooked at the prestigious James Beard house. He is the owner of Fortina restaurants, (locations in Stamford, CT, and in New York in Armonk, Brooklyn, Rye Brook, and Yonkers). Chef Christian Petroni grew up with wonderful home cooked meals, and started working in restaurants at a young age, and honing his craft. When not working at the restaurants or appearing on television he enjoys time with his family, wife and young son.
During his culinary demo Chef Christian Petroni stated that he grew up in the Bronx eating dinner every day at 5:00 pm. His parents, Firella and Lorenz who attended the demo, grew up in Italy, moved to the United States and met in a barbershop.
Chef Christian Petroni is a passionate chef and restaurateur, as well as an engaging and very personable cooking instructor, who joked with the audience asking if they were wondering, "Why is this guy from the Bronx coming up to Greenwich to make bone broth? Because we are working on making an Italian Wedding Soup with bone broth for the fall at (his) restaurant Fortina."
Chef Christian Petroni graciously shares his recipe for Stracciatella Soup with Bone Broth from his culinary demo at the Greenwich WINE+ FOOD Festival 2019.
Chef Christian Petroni – Stracciatella Soup with Bone Broth – Greenwich WINE + FOOD Festival 2019
Che Christian Petroni believes in always using the best ingredients you can find, and always use the best fresh eggs.
To make the bone broth for the Stracciatella Soup, you will need to get bones from your butcher. Chef Christian Petroni advised to give the butcher advance notice as bones are now in much demand.
Method for the bone broth: Preheat oven to 450 degrees Fahrenheit. Add bones to a large roasting pan, add garlic, onion, carrots, and celery, and toss with olive oil. Roast for 30 minutes, stir, continue cooking for 20 minutes.
Remove contents and scrape roasting pan into a large stock pot. Cover with water. Simmer on the stove for 24 – 48 hours. Depending on how rich you want your bone broth to be is dependent on how long you simmer it. The longer you cook the broth, the deeper in color it will be, and the richer it will be. He likes to simmer the broth until it just starts to get sticky. Cooking it any longer, and you will create a demi-glaze.
Stracciatella Soup Ingredients:
Bone Broth
Summer Corn, removed from the cob
Spinach
Handful of Basil
Chopped Parsley
Pecorino Cheese
Eggs
Black Pepper
Salt, at end, to taste

Important notes: Chef Christian Petroni does not add any salt until the end as he wants the salt to come from the Pecorino cheese. He only adds salt if needed when he tastes the soup when it finishes cooking.
For the Summer Corn, when you take the corn off the cob, scrape the cob with the back of your knife into the stock pot to get all the juice out of the cob.
For the cheese, Chef likes to use "Pecorino the other grated cheese, it’s like Parmesan only its sharper, its Parmesan’s sassier cousin."
To create the soup: Stir the bone broth. Whisk the eggs, add in black pepper and Pecorino cheese. Add the parsley and stir. Add to the bone broth, add the corn kernels, and stir. Then add the spinach with a handful of basil and press down into the bone broth. What you end up with is one of the healthier dinners, in his opinion, that you can make as you know everything that went into it and it is "beautiful and delicious."
After the cooking demo we had the opportunity to speak with Chef Christian Petroni as well as his proud parents, Lorenz and Firella, and a few other relatives who came to Greenwich to support him.
