The Chandler Steakhouse at the MGM Springfield
We stayed at the MGM Springfield on June 15, 2019 and had a wonderful dinner at their fine dining restaurant, The Chandler Steakhouse. The décor was at once old-school traditionally elegant and inviting with floral arrangements in the entrance of the restaurant and tables dressed in pristine ivory linens and accessorized with small table lamps, flanked by nail-head studded club chairs and red velvet curved banquettes.
Main & Howard Cocktail
The restaurant has an impressive, innovative and very creative cocktail menu, and we began our evening with 2 of their cocktails, Main & Howard and The Quadrangle. The Main & Howard cocktail was an inspired presentation brought tableside in a smoking box, so that when the box opened the hickory smoke wafted in the air and revealed the cocktail served ina pipe-shaped glass. Made with Bulleit Rye Whiskey, Carpano Antica Sweet Vermouth, Maraschino Liqueur, Angostura Bitters, and garnished with a large orange peel, it not only was visually appealing, the cocktail was well balancedand very tasty. The Quadrangle was another well-crafted cocktail, andwas made with MGM Berkshire Gin, Fresh Lime, Mint, Rose Water, and Cucumber Ice. Created as an evolving cocktail, the mixologist froze cucumber juice into a large square ice cube designed to slowly melt and infuse the cocktail and meld with the other ingredients.

Chilled Shellfish Sampler
The restaurant makes their own Parker House rolls and served hot from the oven accompanied by creamy butter, they were irresistible and perfect to enjoy with our cocktails. From their Chilled Bar we enjoyed a selection of King Crab Legs, Half Maine Lobster, and Shrimp presented with four sauces: Green Goddess, Remoulade, Mignonette, and Spicy Cocktail Sauce.
Roasted Bone Marrow
Next there were amazing appetizers of Roasted Bone Marrow served with Cippolini Onion-Bacon Jam, Herb Salad accompanied by thinly sliced grilled bread, and Executive Chef Kyle Beausoleil’s new menu creation, Lobster Cake with Avocado Jalapeno Cream. The bone marrow was artistically presented and was very tasty. The lobster cake dressed with pea tendrils salad was an inspired interpretation of an iconic symbol of New England, the Maine lobster. Incorporating remoulade sauce, green apple and Parker House rolls into the lobster cake made it shine and earn high marks.

Caesar Salad
For the intermezzo, we had The Chandler Steakhouse’s signature Tableside Caesar Salad for Two, with garlic-butter croutons, and generously topped with aged Parmigiano-Reggiano. Our server Amber expertly crafted this traditional favorite as we sipped glasses of Veuve Clicquot, Veuve Rich, a newmember of the Veuve Clicquot family made with Pinot Noir and Meunier, which had fresh fruit and floral notes that paired well with the salad.
Caramelized Scallops
While the restaurant is a steakhouse, it also has a lovely selection of "surf" items, so for our entrées we had one by land, and one by sea. (For Debra) there was Caramelized Scallops with Cauliflower Cream and fried pickle garnish. Succulent and sweet large golden crusted buttery scallops were well matched with the cauliflower and fried pickle and paired well with the Veuve Rich.
Prime New York Strip Steak
(For Edward) there was a 14-ounce Prime New York Strip Steak served witha balsamic roasted head of garlic designed to be squeezed and spread onto the steak. The combination of flavors was exquisite and was well paired with a glass of 2017 Caymus Cabernet Sauvignon, Napa Valley, California with its lush dark berry fruits on the nose and palate, with a delectable long finish.
Brussels Sprouts
Side dishes included hand-cut golden steakhouse fries with Old Bay Seasoning accompanied by malt vinegar aioli, and Crispy Brussels Sprouts topped with Eggplant Caponata and garnished with pine nuts and micro greens.

The restaurant had a nice selection of tempting desserts on the menu, however we were more than satisfied to forego dessert, until we were surprised with a trio of light and luscious gelato, which of course we had to sample to leave with sweet memories of an exquisite dining experience at The Chandler Restaurant at the MGM Springfield.

The Chandler Steakhouse is open for Dinner Monday, Wednesday, Thursday, and Sunday from 5:00 pm until 10:00 pm, and Friday and Saturday from 5:00 pm until 11:00 pm. The restaurant is closed on Tuesday.
