sparkling wine combines Glera and Pinot Noir grapes that give it structure,

An
interesting note about Ninety Plus Cellars Lot 197 Prosecco Rosé DOC Extra Dry,
Millesimato (Vintage) 2022, from Salgareda, Italy is that although many
producers have been making Sparkling Rosé for many years, only recently has
Italian regulations allowed for it to be called Prosecco Rosé with the blending
of the Glera grape and up to 10-15% Pinot Noir. The result is stunning with an
elegant pink hue and layered nuances of strawberries, red berries, mineral and
citrus notes, and tastes like drinking summer in a bottle.

Tasting
Notes: The color is a delicate rose color with
lively bubbles. The aromatic nose has floral notes of rose and honeysuckle,
with nice minerality, floral and citrus notes on the palate with soft tannins
on the finish. It is an easy to drink sparkling wine with 11% alcohol making it

recipe. Both recipes are elegant, easy to make, and delicious, exactly how
summer entertaining should be done.
Strawberries
and rhubarb are the icons of summer, and we named our cocktail Luxury
Experience - Essence of Summer, which combines Ninety Plus Cellars Lot 197
Prosecco Rosé DOC, Extra Dry, Millesimato 2022 with strawberry rhubarb juice
(see the recipe for Luxury Experience - Strawberry Rhubarb Yogurt Cake below).

Method: Chill Flute glass. Add a long
orange peel "twist" (optional) to the flute, then add the Prosecco Rosé and the
strawberry rhubarb juice.
The
Culinary Recipe - Luxury Experience - Strawberry Rhubarb Yogurt Cake
Luxury
Experience - Strawberry Rhubarb Yogurt Cake is light
and luscious with layers of flavors. We used homemade Greek Yogurt (from Chef Maria Loi's recipe) that (Edward makes weekly), however you can substitute store bought
Greek Yogurt if you choose.
Pan: 7-inch
Springform Pan
Pre-heat
oven to 350 degrees Fahrenheit/177 Celsius
Pro Tip: Cut parchment paper to fit the bottom and sides of the springform
pan. Spray the springform pan lightly with vegetable oil, and press parchment
paper to the bottom and sides of the pan to ensure cake will not stick to pan.
Once cake has cooled, remove parchment paper.

Method for
the Strawberry Rhubarb Compote: Add all
ingredients to a medium saucepan and cook over medium heat until rhubarb is
tender. Remove from heat. Place a large mesh strainer over a bowl and strain
the strawberry rhubarb mixture. Pour the liquid in a jar and refrigerate until
ready to use. Place the strawberry rhubarb compote in the refrigerator until
ready to use.
Pro-Tip: The Strawberry Rhubarb Compote is also lovely to eat topped with
fresh whipped cream or spooned over vanilla ice cream to create a luscious
summer sundae.

Method for
the Crust: Add biscuits to a food processor and
process until tiny crumbs form. Add the butter and process until the crumbs and
butter are incorporated. Spoon dough into the prepared springform pan. Press
down to create the crust. Set crust aside as you prepare the filling.
Pro Tip: To get a packed, even crust, place a piece of plastic wrap on the
dough, then place a another springform bottom or plate on top of the dough and
press down. Remove plastic for filling.

Method for
the Filling: Add all ingredients to a food processor
and process until smooth. Pour filling over prepared crust. Bake in preheated
oven for 30 minutes or until cake is firm and tester comes out clean. Remove
from oven, set on a rack to cool. When cool, refrigerate until thoroughly
chilled.
Finishing
the Cake: Carefully spoon strawberry rhubarb
mixture on top of the cake. Set cake aside. Prepare a setting "gel" by heating
one-half cup of reserved strawberry rhubarb liquid and 1 tablespoon agar,
stirring until slightly thickened. Pour over the top of the strawberry rhubarb
mixture on the cake. Arrange extra quartered strawberries around the edge of
the cake. Refrigerate until serving time.
Presentation: Pipe Greek yogurt in the center of the cake and garnish with thin
orange peels.

Terminology
Prosecco
has six different classifications: Brut Nature, Extra Brut, Brut, Extra Dry,
Dry, and Demi-Sec, which are based on sugar content (g/l means grams per
litre). Brut Nature is the driest classification with 0-3 g/l, Extra Brut
ranges from 0-6 g/l and is considered to very dry, Brut ranges from 1-12 g/l
and is considered dry, Extra Dry ranges from 12-17 g/l and is considered medium
dry, Dry ranges from 17-32 g/l and is medium sweet, and Demi-Sec is the
sweetest with 32-50 g/l.
