Notes: Ninety Plus
Cellars Lot 132 Côtes de Provence, Rosé de Provence, Rosé, A.O.P France 2022 is
made from a blend of Cinsault, a red wine grape varietal, and Grenache, a
thin-skinned red wine grape, which is pale in color, grown in Le Haut Var of
Provence, France.
Tasting
Notes: The color is a lovely salmon color with
aromatic fruit, floral and stone fruit notes, and ripe strawberries on the nose
and on the palate. It is the essence of summertime and is perfect to drink on
its own, or to pair with a variety of food.

Method for
the Orange Simple Syrup: Add the orange
peels, sugar, and water to a small saucepan and bring to a boil over medium
high heat. Boil until the sugar is dissolved and liquid is clear. Remove from
heat and let sit for 30 minutes at room temperature to cool. Remove the peels
from the syrup and set aside. Pour orange simple syrup into a jar and
refrigerate until ready to use.
Pro Tip: In addition to using the orange simple syrup in salad dressing, we
like to use it in cocktails, lemonade, iced tea, and even brush it on cakes to
keep them moist before frosting them.
We like to
go the extra mile when we make orange simple syrup, and after we remove the
peels from the syrup, we place them on a parchment paper lined baking tray and
bake them in the oven at 100 degrees Fahrenheit/38 degrees Celsius until they are
dry. We then process them in a blender and pulse into a powder. We then mix the
powder with either kosher salt or sugar, which we use to rim cocktails,
lemonade, or iced tea.

Method for
the Salad Dressing: Mix all
ingredients in a jar and shake hard or whisk to fully incorporate. Let the
dressing rest while you make the Shrimp and Scallop Seafood Salad.
Method for
the Shrimp and Scallop Seafood Salad: Add 10 of
the shrimp and the rest of the ingredients to a large bowl, add the salad
dressing and toss well.
Presentation: Line a large bowl or platter with arugula, top with salad. Arrange
10 shrimp alternately with lime slices around the edge. Sprinkle with freshly
cut chives, and garnish with Nasturtium leaves and a Nasturtium flower.
