We dined at Goosefeather in August 2026 where one of the many delicious dishes we enjoyed there was his corn recipe, which was the perfect introduction to his creative approach to modern Chinese cuisine. If the name Chef Dale Talde seems familiar to you, you may have seen him competing on the culinary shows Chopped, Iron Chef America, Knife Fight, and Top Chef, where he was a three-time cheftestant and judge on Bravo’s Emmy-winning culinary show. He also is a celebrity chef who was at the New York City Wine and Food Festival, and Westchester Magazine’s Wine & Food Festival to name a few.

Chef Dale Talde
Growing up in Chicago his passion for cooking began cooking alongside his mother. The son of Filipino immigrants, he is proud of his cultural heritage which is evident in his creative use of flavors and ingredients. Dale Talde is a world-class chef, and restaurateur who opened his first restaurant, TALDE in Brooklyn, New York in 2012, followed by other restaurants.
Chef Dale Talde and his business and life parter Agnes created www.foodcrushhospitality.com in 2018 and opened Goosefeather in 2019. In 2020, Esquire Magazine included Goosefeather on its Best New Restaurant List, and in 2022 Chef Dale was nominated for the prestigious Jame Beard Award for Best Chef in New York.
He is also the owner of Talde Noodle Bar in Terminal B at LaGuardia Airport (opened in 2023), and Tigress Restaurant & Rooftop Bar in Naples, Florida (opened in 2025), and is a cookbook author of Asian American (2015).

Sweet Summer Corn & 5-Spice
Sweet Corn, 5-Spice, Sweet Soy, and Brown Butter Labneh by Chef Dale Talde

Method: Cut corn into 8 pieces. Dry fry for 15 seconds. Toss with Maldon salt and Chinese 5-Spice BBQ Rub.
Presentation: Using a share plate, place a quenelle of Brown Butter Labneh off center on the plate, stack the corn, and garnish with cilantro and lime wedge.

Maldon Sea Salt

Method: The day before mixing, hang labneh in cheesecloth overnight. Brown the butter the same day as hanging the labneh. Do not strain the butter.
Using the mixer, mix ingredients together thoroughly with a whisk attachment, adding salt to taste. Place the mixture in a quart container and refrigerate until ready to use.

Method: Toast all ingredients separately. Cool. Mix and store in a quart container.
