The Colors of Dessert, by Battman PDF Print E-mail

Color of Desserts by BattmanWhen one thinks of desserts, seasons or flavors are what usually come to mind, however New York photographer Battman takes a unique culinary approach for his latest cookbook, The Colors of Dessert boasting 6 colors and endless possibilities.

 

The title, The Color of Dessert, is clearly inspired and reflects the theme of the book from the genius photographer who created New York Sweets. For this project, Battman challenged 87 chefs to pick a color from a hat and create a dessert based on that color (red, yellow, purple, green, orange, or brown). The chefs jumped at the artistic challenge and the results are spectacular visuals that capture the color and our imaginations.

The Colors of Dessert begins with the color red and showcases the chef as artist where a few of the recipes include Stewed Rhubarb with Frozen White Chocolate Yogurt and Coriander Shortbread (Pastry Chef Della Gossett of Charlie Trotter's); Rhubarb - White Chocolate Napoleon (Pastry Chef Maria Lindstrand - Metropolitan Club New York); Grapefruit Cheesecake (Chef/Owners Ellen Sternau and Beth Pilar of how sweet it is New York City); White Chocolate and Raspberry Mousse Cake (Chef/Owner Jacques Torres of Jacques Torres Chocolate); and White Chocolate Mousse and Frozen Beet Parfait with Beet Caramel, Hawaiian Pineapple Sorbet and Citrus Tapioca (Pastry Chef John Miele of eighty one).

 

Yellow is anything but mellow with luscious inspirations including Sweet Corn Cereal Layer Cake (Pastry Chef Michele Weber of good enough to eat); Lemon Napoleon (Executive Pastry Chef Marc Aumont of The Modern); Citrus Almond Semolina Sponge Cake with Candied Lemons and Whipped Yogurt (Executive Chef Timothy Reardon and Pastry Chef Igor Schiglik of Barbounia); and Coconut Sponge Cake (Pastry Chef Jasmine Bojic of Tavern on the Green).

Purple shows its diversity including recipes for Limoncello Almond Bar with Blueberry Sorbet (Executive Pastry Chef Michael Gabriel of The Sea Grill); Blackberry Streusel Cake with Blackberry Lime Sherbet (Executive Pastry Chef Nancy Olson of Gramercy Tavern); Chocolat et Violettes (Executive Pastry Chef Daniel Skurnick of Buddakan); and Vacherin (Chef Nicolas Morgenstern).

 

Green takes on decadent indulgence with recipes including Carbonated Cucumber Soup with Sake Sorbet and Shiso Meringue (Chef/Owner Sam Mason of Tailor); Green Tea Kuzu Nagashi (Pastry Chef Alex Grunert of Bouley); Macaron Matcha with Roasted Sesame Seeds (Chef/Owner Florian Bellanger of MAD-MAC); and Honeydew Mint Sorbet (Pastry Chef Gina DePalma of Ristorante Babbo).

Orange is exciting with Orange Creamsicle Sherbet (Executive Pastry Chef Cory Colton of Quality Meats); Passion Tres Leches (Pastry Chef Deborah Racicot of Gotham Bar and Grill); The Pumpkin Puzzle (Executive Pastry Chef Catherine Lahitette of Petrossian Paris); Orange Bavarian Cream Cake (Executive Pastry Chef Patrick Lemble); and Candied Jack Be Little Pumpkins (Executive Pastry Chef Christopher W. Broberg of Café Gray New York).

 

Brown offers a luscious Slice of Prime (Executive Pastry Chef Elizabeth Katz of Primehouse New York); Kazandibi-Caramelized Milk Pudding (Chef Yasin Varol of Peri Ela ~Turkish); and Chocolate Caramel Tart with Caramel Popcorn, Chocolate Pudding, and Salted Caramel Ice Cream (Executive Pastry Chef Nicole Kaplan of The Plaza Hotel).

 

Each of the innovative dessert recipes have easy-to-follow instructions, captivating full-page glossy photography by Battman, and even provide a coffee pairing suggestion by Starbucks that will inspire you to don a chef coat and an apron and whip up a dessert or two! The hardest part is trying to decide which color to try first.
