Chef Kevin Dundon - Full On Irish - Cookbook In addition to owning Dunbrody Country House Hotel & Restaurant and Cookery School with his wife, Catherine, in County Wexford, Ireland, the award-winning chef Kevin Dundon is a regular on Irish television and radio having his own weekly program, and he also owns restaurants in the United States.

What I especially loved about his cookbook Full On Irish, is Kevin's fresh approach to cooking, that the recipes are stylishly presented with easy to follow instructions, and that it is full of beautiful photographs that will certainly inspire a trip to Ireland.

Kevin Dundon has written Full On Irish as if he is indeed in the kitchen sitting beside you and having a chat while providing you with insight into his culinary style, and then helping you to create the recipes.

Examples of his style are found in the narratives for "Boxty Potato Cake Salad," "Doyle's Dublin Coddle," and "Poached Pears with ‘Raglan Road' Rice Pudding." He describes "Boxty Potato Cake" as "Crispy on the outside, soft and buttery inside, these Boxty Potato Cakes will help you get over the worst of hangovers..." which definitely intrigued me to keep reading as well as create the recipe!

As for "Doyle's Dublin Coddle," he writes, "This is my twist on a dish that has been around since the eighteenth century. Traditionally it was made on pay day or on a Saturday night and left simmering on the stove as it was not known what time the man of the house would return home from the pub."

Writing about "Poached Pears with ‘Raglan Road' Rice Pudding" he offers, "Rice Pudding brings back memories of childhood. Although this dessert is a little more sophisticated than the version I would have enjoyed then. The pears improve with keeping, making this an excellent dessert for entertaining."
