While you may not be able to jet off to the South of France on a whim, you can enjoy Absente Absinthe Refined imported by Crillon Importers, Ltd, anytime, anywhere. Absinthe was the favorite drink of the French artists Van Gogh and Degas, and Absente Absinthe Refined is a luscious absinthe product made in the South of France using wormwood, anise, mint, and spices. It packs a punch at 110 proof (55% Alcohol by Volume), so a little of this delicious product goes a long way. We first made our acquaintance with absinthe during a trip to New Orleans, Louisiana in 2006 for an annual spirits industry conference. At the end of a long day of seminars and a spirited dinner, we found ourselves at the Old Absinthe House with its belle époque bar and marble absinthe fountains used to drip cool water onto a sugar cube set on an absinthe spoon balanced on a glass with a small amount of absinthe in it, known as "the Absinthe ritual." Intrigued, of course we had to try it. It was delicious and very potent.

When we learned about Absente Absinthe Refined being available in the United States, we wanted to renew our acquaintance with this potent potable. The packaging is gorgeous; an old-time tall green bottle with pressed design and vintage label that will be a standout at commercial or home bars. The box features an image of Van Gogh and includes a specially designed absinthe spoon which has an intricate opening to allow the sugar water to flow through it.

Box Notes on the Product: "Nearly 100 years after its ban, you can now enjoy one of history’s most notorious liquors in all its 19th century glory. Today, the signature drink of Van Gogh, Oscar Wilde and Toulouse-Lautrec can be enjoyed as it was in the 1900s. Absente, the first legal Absinthe recipe in the US market since 1912, it is still handcrafter in the south of France using only the highest quality artisanal distillation methods and ingredients, including anise, star anise, balm, peppermint, and a full measure of the legendary and notorious botanical Wormwood, also known as artemisia absinthium. Tasting Notes: Absente Absinthe Refined has rich anise and spice notes on the nose, with anise and black licorice on the palate. It is an enticing spirit that lends itself to creative cocktail and culinary recipes.

Absente Absinthe Refined is a powerful alcohol which has 55% ABV (110 proof) versus other spirits which have around 40% ABV (80 proof) and hence should be enjoyed responsibly. Whereas we normally make cocktails with 1.5 – 2 ounces of alcohol, for this powerful beauty, Luxury Experience – The Green Fairy Aka "The Ritual" we use 1 ounce of the Absente Absinthe Refined to 5 ounces of cold water. Enjoy as a long sipping cocktail and savor the flavors and the moment, perhaps imaging yourself sitting at an outdoor café in Paris or the South of France. Santé!

As we do not have a belle époque marble fountain at our home, we created "the absinthe ritual" by slowing pouring ice cold water from a squeeze bottle over a sugar cube placed on an absinthe spoon into a tulip glass to keep the Absente Absinthe Refined deliciously chilled.

Method: Pour 1-ounce Absente Absinthe Refined in the bottom of a glass. Place an absinthe spoon over the glass. Place a sugar cube on the spoon and slowly drip ice cold water over the sugar cube to melt it into the Absente. Garnish with fennel frond. Sip and enjoy.

Method: Pour 1-ounce Absente Absinthe Refined in the bottom of a glass. Place an absinthe spoon over the glass. Place a sugar cube over the spoon and slowly pour the cranberry juice over the sugar cube to melt it. Add 4 dashes Fee Brothers Cranberry Bitters and garnish with 3 fresh cranberries.

Luxury Experience – Cranberry Panettone French Toast has Absente Absinthe Refined in the rich and flavorful egg batter, and also in the cranberry compote, that is equally at home served for Brunch or as a tasty dessert lightly dusted with confectioners sugar. For Valentine’s Day, we used large and small heart shaped cutters to cut the panettone into heart shapes.

Method for the Cranberry Compote: In a small saucepan, add the cranberries, fresh orange juice, Absente Absinthe Refined, salt, and agave and cook until the cranberries are tender, and liquid has evaporated. Set aside.

Method for the French Toast: Thickly slice the cranberry panettone and cut slices into 2 large hearts with a heart-shaped cookie cutter, and 2 smaller hearts with a smaller cutter. Set aside.

In a shallow dish, add the Absente Absinthe Refined, egg, Half & Half (or light cream), vanilla, and whisk to thoroughly combine. Note: Dish should be large enough to dip the heart-shaped panettone.

Heat a large sauté pan, add 3 tablespoons butter, and melt. Quickly dip the panettone hearts in the egg batter, add to the sauté pan and cook until golden on each side.

Presentation: Place French toast "hearts" in the middle of a dish, place the cranberries in a heart shape in the center of each heart, and lightly dust with confectioners sugar, or serve with butter and hot maple syrup.
