Thomas Ciszak of the French
restaurant, Brasserie Mémère located in Closter, New Jersey took time from the
kitchen of his traditional French restaurant to provide an
intriguing look at his background, the restaurant, and provide one of the
restaurant's cocktail recipes to provide a delicious "sip" of their
menu.

Thomas Ciszak found his culinary inspiration to become a chef from his
grandmother and named the attractive Brasserie Mémère in her honor.
His grandmother was culinary trained in Germany, and the name mémère
means "grandmother or granny" in English.

Mémère opened in December 2019 and features a dream team of Chef Thomas
Ciszak (formerly of Chakra, Blue Morrell), widely respected Beverage Director and Sommelier Evelyn Ciszak (Thomas' wife and co-owner) who honed her craft as such
prestigious restaurants as Chakra and Jean-Georges, Chef Kevin
Takafuji (originally from Hawaii and who honed his craft working with
Daniel Boulud and Eric Ripert of Le Bernardin), and NYC restaurateur Michael
Chin (Chakra, Bâtard, Montrachet, Red Rooster, and more), who bring
their culinary and hospitality excellence to the restaurant.
We had a
wonderful dinner at the restaurant on Sunday, February 27, 2022, where the
cocktail menu is as inspired as the culinary menu which features many classic,
traditional French favorites including Escargots, Moules à La Provençale
(mussels), Truite Aux Amandes (trout), and Confit de Canard (duck).
The
restaurant's focus is creating excellent cuisine utilizing classic French
techniques and flavors yet imprinting them with Chef Thomas' own style. His
love of the garden and time well-spent with his beloved grandmother are behind
the freshness of the ingredients, sourcing locally, and his commitment to
delivering a memorable experience for the restaurant's guests.
Beverage Director and Sommelier Evelyn Ciszak, who crafted the wine list and and cocktail menu, graciously provides the recipe for their cocktail Avion en
Papier, which translates from French to English as Paper Airline. We
had this very tasty cocktail at the restaurant, and it was excellent. Made with
Four Roses Bourbon, Aperol, Meletti Amaro, and fresh lemon juice, this cocktail
will tempt your palate into visiting the restaurant to pair it with their
excellent cuisine.

Method: Add all ingredients into a shaker with ice. Shake vigorously and
strain into coupe. Garnish with flamed lemon peel. Cheers!

from Newark, New Jersey, and 30 miles from Greenwich, Connecticut.

Mémère (winter hours): Wednesday through
Saturday from 4:00 pm until 10:00 pm, Sunday Brunch from 11:00 am until 4:00
pm, and Sunday dinner from 4:00 pm until 8:00 pm. Mémère Express Counter
Service is open Wednesday through Sunday from 10:00 am until 4:00 pm.
Full-Service Lunch is available Wednesday through Saturday from noon until 4:00
pm. Take-out is available. Happy Hour is on Wednesday, Thursday, and Friday
evenings. The restaurant is closed on Mondays and Tuesdays.
