Þorskurinn er soðinn og lyft upp úr soðinu. Mjólkin er hituð að suðu ásamt lauknum og kryddinu. Smjörbollu eða sósuþykkni bætt út í. Hluti af sósunni tekinn frá. Fiskinum er bætt út í sósuna ásamt kartöflum og hrært varlega saman við. Ef plokkfiskurinn er of þurr má nota afganginn af sósunni. Kryddi er bætt út í eftir smekk. Sumir vilja mikinn pipar en aðrir minna. Í lokin set ég kalt smjör út í til að fá mýkri áferð. - Til að gratínera plokkfiskinn þarf hollandaise-sósu eða bearnaise-sósu og rifinn ost. Bakað þar til rétturinn verður gullinbrúnn.
